INGREDIENTS

  • 1 pound green beans, trimmed
  • Pinch of salt
  • 2 tablespoons butter
  • 1 shallot, finely chopped
  • 3 garlic cloves, minced
  • 1/2 cup sliced almonds
  • Juice of 1/2 lemon
  • Flaky sea salt

HOW TO MAKE IT

  1. Bring a large STAUB skillet of water to a boil and season with a pinch of salt. Add the green beans and cook briefly until tender-crisp, then drain and transfer to an ice bath to stop the cooking process. Drain well and set aside.
  2. Wipe out the skillet and return it to medium heat. Add the butter and let it melt until bubbly. Stir in the sliced almonds and toast for 2 to 4 minutes, until lightly golden.
  3. Add the shallot and garlic, cooking for another 2 to 3 minutes until fragrant. Stir in the green beans and toss to coat evenly in the butter and almond mixture.
  4. Finish with lemon juice and a sprinkle of flaky sea salt. Cook just until the beans are heated through, then serve immediately.
