Green Bean Almondine
A bright, classic side, these green beans are tossed with toasted almonds, garlic, and a touch of lemon for a fresh, balanced finish. Light yet flavorful, they complement everything from roasted chicken to steak.

INGREDIENTS
- 1 pound green beans, trimmed
- Pinch of salt
- 2 tablespoons butter
- 1 shallot, finely chopped
- 3 garlic cloves, minced
- 1/2 cup sliced almonds
- Juice of 1/2 lemon
- Flaky sea salt
HOW TO MAKE IT
- Bring a large STAUB skillet of water to a boil and season with a pinch of salt. Add the green beans and cook briefly until tender-crisp, then drain and transfer to an ice bath to stop the cooking process. Drain well and set aside.
- Wipe out the skillet and return it to medium heat. Add the butter and let it melt until bubbly. Stir in the sliced almonds and toast for 2 to 4 minutes, until lightly golden.
- Add the shallot and garlic, cooking for another 2 to 3 minutes until fragrant. Stir in the green beans and toss to coat evenly in the butter and almond mixture.
- Finish with lemon juice and a sprinkle of flaky sea salt. Cook just until the beans are heated through, then serve immediately.
