Makes about 16-20 beignets

 

INGREDIENTS

  • 1 cup whole milk
  • 2 tbsp salted butter
  • 1 package rapid rise yeast
  • 1/3 cup white sugar
  • 1/2 tsp salt
  • 1 egg
  • 4 cups all-purpose flour
  • Canola oil, for frying
  • Powdered sugar, for dusting

HOW TO MAKE IT

  1. In a microwave-safe bowl, combine milk and butter and heat in 30-second intervals until the butter is melted.
  2. Pour the mixture into the bowl of a stand mixer and whisk in the yeast, sugar, salt, and egg.
  3. Mix in the flour with a spatula until a dough begins to form.
  4. Attach the dough hook and knead on medium speed for 5 minutes.
  5. Cover the bowl and let the dough rise in a warm place until doubled in size, about 2 hours.
  6. Roll the dough out on a floured surface to about 1/2 inch thickness.
  7. Use a heart-shaped cookie cutter to cut the beignets. Cut a small slit at the top of each heart to help them keep their shape.
  8. Heat canola oil in a large cast iron pan to 360°F.
  9. Fry the beignets for about 90 seconds per side, or until golden brown.
  10. Transfer to a paper towel-lined plate to cool. Dust with powdered sugar and enjoy.
