INGREDIENTS

1 thick slice soft and spongy white bread
Unsalted butter
25g / 1 ounces freshly grated mozzarella
5g crumbly blue cheese
Liquid honey
Olive oil
Coarsely ground black pepper

HOW TO MAKE IT

  1. Set the oven to broil (grill) or preheat to the highest setting.
  2. Spread the bread with butter and sprinkle with the mozzarella and blue cheese. Transfer to a baking sheet and toast under the grill for 6-8 minutes or until golden brown and the cheese has melted.
  3. Drizzle with honey and olive oil and season with pepper to taste. Enjoy!
