Tarte flambée

  • 125 g (4.5 oz) wheat flour
  • ½ tsp salt
  • ½ tsp sugar
  • 80 ml (3 fl oz) mineral water
  • wheat flour for working


  • 3 shallots
  • 100 g (3.5 oz) crème fraîche
  • salt, pepper
  • 75 g (3 oz) diced ham
  • 80 g (3 oz) grated cheese


  1. Put the flour, salt and sugar in a mixing bowl. Add the mineral water and knead everything into a smooth dough using a hand mixer with a dough hook.
  2. Peel and halve the shallots and cut into fine strips or cubes. Stir the crème fraîche until smooth and season with salt and pepper.
  3. Knead the dough briefly with your hands on a lightly floured work surface and divide into four portions. Roll out the dough portions to the size of the grid of the ZWILLING deep fryer and prick several times with a fork.
  4. Place the dough on the grid and spread with the crème fraîche. Sprinkle with shallot, ham and grated cheese.
  5. Place the grid in the hot air fryer. Bake the tarte flambée at 200 °C for approx. 8-10 minutes until crispy.
  6. In the meantime, roll out the other tarte flambée. When the time is up, remove the finished tarte flambée and enjoy immediately or keep warm. Prepare the remaining tarte flambée in the same way, reducing the baking time by 1-2 minutes if necessary, as the hot air fryer is already heated up.


The topping can be varied savoury or sweet according to taste.
