Salmon with herb and mustard crust

  • 2 slices of toast
  • ¼ bunch chives
  • 1 untreated lemon
  • 2 salmon fillets (approx. 125 g/4.5 oz each)
  • 1 tablespoon vegetable oil
  • salt, pepper
  • 30 g (1 oz) soft butter
  • 2 tsp medium hot mustard
  • 1 tsp liquid honey


  1. Toast bread and cut into cubes. Wash the chives, shake dry and cut into fine rolls. Wash the lemon hot, dry and finely grate half of the peel. Wash the salmon fillets, dab dry, brush all over with oil and season with salt and pepper.
  2. For the crust, mix butter, mustard and honey until creamy. Stir in lemon zest, chives and toast cubes and season everything with salt and pepper.
  3. Place the salmon fillets on the grid in the ZWILLING air fryer and spread the crust evenly over them. Cook in the "Fish" program at 180 °C for approx. 10-12 minutes, depending on the thickness of the salmon fillets.
  4. Remove at the end of the cooking time and enjoy immediately. Serve with fried potatoes and cucumber salad.


If you like it a bit spicier, you can use hot mustard. Alternatively, coarse-grained mustard is also suitable.
