Spring hummus Recipe for personal blender, table blender and power blender

INGREDIENTS

  • 60 g frozen peas
  • 1 clove of garlic
  • 15 g fresh herbs (e.g. wild garlic, parsley, coriander, chervil)
  • 50 ml olive oil
  • Juice of ½ lemon
  • salt, pepper
  • cumin powder
  • 1 tin of chickpeas (265 g drained weight)

HOW TO MAKE IT

  1. Bring enough water to the boil in the ZWILLING ENFINIGY Cool Touch Kettle Pro. Place the peas in a bowl, pour over the boiling water until they are all generously covered and leave to stand for approx. 5 minutes.
  2. In the meantime, peel the garlic. Wash the herb stalks, shake dry, remove the coarse stalks and chop a little smaller depending on their size. Drain the peas in a sieve and leave to drain.
  3. Measure the oil into the blender jar of the ZWILLING ENFINIGY Personal Blender and add the lemon juice. Season with salt, pepper and cumin. Add the garlic, peas, chickpeas with liquid and cabbage. Screw on the lid, place the jar on the blender and blend using the pulse or smoothie program until coarse or fine, depending on the desired consistency.
  4. Season the finished hummus again to taste and chill for approx. 1 hour.
  5. Serve the hummus in a bowl, e.g. from STAUB. Serve with baguette or toasted flatbread and a small side salad.

Tip

The hummus tastes particularly delicious with fresh wild garlic. However, as wild garlic only has a short season, depending on the weather, from March to flowering in May, simply use other herbs such as parsley or chervil.
