Ingredients

  • 1 cup of couscous
  • 400 ml vegetable broth
  • 2 small zucchini
  • 1 pepper
  • 100 g feta
  • 1 teaspoon curry
  • 1 teaspoon paprika powder
  • 1/2 teaspoon cumin
  • 50 ml lemon juice
  • Fresh mint
  • Sea salt
  • Pepper
  • Olive oil

Preparation

  1. First mix the couscous with the spices.
  2. Bring the vegetable broth to the boil and add the seasoned couscous. Allow to swell briefly and leave covered without heat.
  3. Slice the zucchini diagonally. Brush with olive oil, season with salt and pepper and then grill until dark brown.
  4. Season the couscous with salt, pepper, lemon juice and olive oil and cut the peppers into strips.
  5. Fold the grilled courgettes and peppers into the couscous with some chopped mint.
  6. Finally, put everything in a serving bowl and crumble the feta on top. Garnish with fresh mint
