The Miyabi GYUTOH from the 5000 DP range has a blade of CMV60-Steel, incorporating 64 layers of stainless steel. The CRYODUR® blade, ice-hardened at 196 degrees C is extremely tough and resistant. The knife handle has a stable Micarta handle for safe and ergonomically comfortable handling. The Japanese blade is sharpened on both sides, using a special Japanese technique, giving a particularly sharp Honbazuke edge. The GYUTOH knife makes accurate, lengthy cutting tasks much easier. This Japanese knife is ideal - but not exclusively - for the preparation of Japanese dishes such as sashimi. As well as a high degree of functionality, which is particularly evident in its sharpness, the GYUTOH knife is also an elegant and exotic knife, which has its place in both classic and modern kitchens.
