INGREDIENTS

  • 6 vine tomatoes
  • 1 onion
  • 1 clove of garlic
  • 2 tbsp olive oil
  • 800 g peeled canned tomatoes
  • Salt pepper
  • 1 teaspoon dried oregano
  • 2 tbsp crème fraîche
  • 1 tbsp white balsamic vinegar

DECORATION

  • 4 tsp croutons
  • 4 tsp chopped parsley
  • 8 mozzarella hearts
  • 4 basil tips
  • HOW TO MAKE IT

    1. Wash the tomatoes, remove the stems and quarter them. Peel and dice the onion and garlic.

    2. Heat oil in the cocotte. Sauté onion and garlic in it. Add fresh and canned tomatoes, season with sugar, salt, pepper and oregano and bring to the boil. Cover with the lid and simmer over low heat for about 15-20 minutes. Refine with crème fraîche and vinegar, puree and finally season again.

    3. Prepare the tomato soup, garnish with toppings as desired and serve.

    TIP

    This recipe can also be made with fresh tomatoes during tomato season. Replace the appropriate amount of canned tomatoes with fresh tomatoes.
