The right balance.This is a good little boning knife. It has the right amount of stiffness and flexibility to cut around a chicken breast or a chuck roast. The handle is comfortable and easy to work with.
The Gourmet line is a very good line of stamped knives. They are manufactured under tight controls and precise standards at Zwilling’s factory in Solingen, Germany. They have a full tang, running from the tip to the heel of the handle making these knives sturdy and stable. The comfortable handle is solid without being heavy.
Because the composition of the steel, these knives will stay sharp and responsive with every cut. Keep the blades honed, sharpen once or twice a year and you will enjoy them each time you use them. Dishwasher safe, but hand wash to keep it looking new.

A perfectly thin and flexible knife for taking meat off of bone. It really glides right thru the meat to get to the bone and slices off quickly and with ease. It is a nice size and not too big or long, making it comfortable and easy to grip and use. I have used it for more than meat off bones, too. A great value knife; add more to this one from the Gourmet series! Great for everyday use and for taking camping, on trips outdoors and more!

Sharper, Chip Resistant and Sturdy Knife!ZWILLING Gourmet is the go-to knife for home chefs eager for their everyday knife to be exceptional. This 5.5" flexible boning knife is one of the most useful kitchen tools, so thin and yet very functional to separate meat and bones. I personally used this boning knife for filleting because it is not too long for my hand. I can control the blade better than a longer one. This is such a great knife and I could use it to slice fruits and vegetables when needed. This is a single-piece, precision-stamped blade construction is lighter than forged knives, allowing for maximum maneuverability. Proudly crafted in Germany, the knives are made of special-formula steel, combined with our signature ice-hardening technique, the blades are harder, and retain their sharpness longer.

Shaped PerfectlyThis knife can get into any small crevice and between and piece of meat and bone.
I use it all the time and not only for boning work. It works really well with sectioning citrus - think grapefruit. Made from German Special Formula Steel and ice hardened the blade stays sharper longer than other manufacturers.

Gourmet knives are stamped from a single sheet of steel which is specially formulated to be corrosion resistant. These knives will retain their razor sharp fine edge use after use. The boning knife is shaped long, thin and flexible with a sharp pointed tip to help you guide it along edges between meat and bone or even between meat and skin or fat that you'd like to trim. This knife has a light feel but with a full tang of steel that runs through to the end of the handle which makes it feel sturdy.

great gripthis knife offers an excellent grip which is important for a boning knife. this is an essential tool for preparing meats for cooking. this a an extremely sharp, flexible knife. Easy to maneuver in tight places.. the slender tip is perfect for peeling silver skin from meats.
This is an excellent knife for removing fats from meats.
Handle is comfortable and sturdy.

Made In GermanyPerfect for deboning chicken but can also be used as a utility knife. The blade is flexible and very sharp, and because it's constructed from high carbon German steel, I know that it's going to be very durable and hold it's edge really well.
The three rivet handle is light weight and very comfortable.

great boning knifeI am very happy with this knife. The German steel blade is very strong and sharp. The slim blade profile allows me to get very close to bone and skin with little waste. The blade is very durable and has just enough flex to help go around bone. The handle is very comfortable to hold in any position.
