Rated 5 out of 5 by from Beautiful Ceramic Stone! Miyabi knife buddy! This stone is fantastic for sharpening my blades back to their factory edge. It has an ultra-fast grinding effect and the stone itself is extremely low wear. This stone is suitable for all types of knives EXCEPT for ceramics. Though there is certainly a learning curve, these stones are for sure the way to go, especially for high-quality knives such as Miyabi knives, Kramer knives, and Zwilling's. But, like the any other stone, you still need a lower grit to sharpen and you finish with the 1000. I would recommend that you practice with a cheaper knife if possible, just to make sure you get a feel for the motions and the process. But the perfect edge really makes for effortless cutting and elevates the cooking experience.

Rated 5 out of 5 by from Great way to get your Miyabi's sharp I have a lot of really nice knives and wanted to get that factory edge back on them once they went dull. The wet stone is fantastic. Takes practice, but the results are so much better than using any other sharpening tool. If you have nice knives, Japanese or Western, definitely go the wet stone route for sharpening.

It feels almost smooth which is perfect for realigning the blade and getting my knives super sharp. I prefer this over the honing steel as I feel like I have better control of the angle and pressure which is key to the perfect edge.

It has an ultra fast grinding effect and is suitable for all types of knives and material. Just remember when you are learning use a practice knife, you can pick one up at a garage sale. Then when you have mastered the technique switch to your beloved knives.

It is good to use a higher grit to finish and polish your knife as a second step. You will be amazed at how great your knives feel while cutting once you perfect how to use a sharpening stone.

The last answer said this is a 1000 grit stone. But the video man says the stone has a course side and a fine side. So which is it?

This item is 1000 grit only. The video is for instructional purposes, but the product featured is the ZWILLING J.A. Henckels TWIN Pro 250/1000 Combination Japanese Water Stone (https://www.zwillingonline.com/32505100.html), which has a 250 grit side for sharpening and a 1000 grit side for refining/touch-ups.

Item title says 100 grit, specifications section lists 1000 grit. Which one is it? And what is a good grit number if that is a factor in sharpening?

This product is 1000 grit. Just like with sandpaper, the smaller the grit number, the more coarse it is and the more metal it will remove from your blade. A finer grit (up to 8000) will lightly sharpen and refine a blade.
