The Santoku knife from the ZWILLING TAKUMI series is a genuine original, a knife made in Japan. Made in the Japanese knife-making city of Seki, this Santoku knife is the result of traditional oriental craftsmanship combined with German engineering skills.


The ultra-sharp Honbazuke honing is particularly worthy of note. The blade was hand-ground in Seki by true masters of their craft and is the result of high-precision skilled work. With our brand new premium steel as the middle layer, 101 layers of steel were embossed, resulting in a blade that is in a class of its own: a hardness of 63 HRC, great initial sharpness and edge retention and at the same time maximum flexibility for cutting, roll-chopping and mincing.


A composition that takes the user to a new dimension of Santoku knives in terms of hardness, edge retention and sharpness. Three virtues of a premium knife, brought to unity in this work of Japanese forging craft.

  • Kanren, which means “connection” in Japanese, is a collection that beautifully illustrates the union of German engineering with Japanese craftsmanship. This workhorse knife is designed to do everything in the kitchen, including chopping, slicing, and dicing. The FC61 core is embedded in 48 layers of stainless steel which make up the unique Damascus pattern on the knife, protecting the blade from corrosion and chipping. The cutting edge is Honbazuke-honed in Seki, Japan, a three-stage grinding, sharpening, and polishing process that results in razor-like sharpness. With its curved bolster and comfortable black linen Micarta handle, this knife delivers the ultimate in ergonomic, fatigue-free cutting.
