INGREDIENTS

  • 500 ml milk
  • 100 g sugar
  • 4 egg yolks
  • 1 vanilla pod
  • PREPARATION:

Bring the milk and half of the sugar to the boil, add the halved vanilla pod, bring to the boil again and leave the milk overnight.

The next day, bring the milk to the boil again. Mix the egg yolks and the remaining sugar together.

Slowly strain the hot milk through a hair sieve over the egg yolks while vigorously stirring them. Beat the mixture over a bain-marie until rose coloured.

Allow the mixture to cool completely (over ice-cold water is quickest) and then freeze in the ice-cream machine.

TIP: The vanilla milk doesn’t have to be prepared on the day before. However, this does improve the flavour from the vanilla pod. The flavour is able to slowly absorb from the pod. If there is available time, it should be used to enjoy a more intensely flavoured vanilla ice-cream
