INGREDIENTS

  • 750 g macaroni pasta
  • salt
  • 60 g butter, room temperature
  • 40 g wheat flour
  • 300 g Parmesan cheese
  • 250 g Cheddar cheese
  • 250 g Emmental cheese
  • 200 ml cream
  • 400 ml milk
  • ½ tsp sweet paprika powder
  • pepper

    PREPARATION (55 Mins.)

    1. Preheat the oven to 200 °C/180 °C fan. Cook the pasta for about 5 minutes in enough salted water. Make sure that they do not cook too long, because they will be in the oven for another 35 minutes afterwards. Knead the butter with the flour. Grate the cheese.

    2. Mix up the cream and the milk, boil it and put in the flour and butter mix. Cook until the sauce gets thick. Season the sauce with paprika powder, salt and pepper and add halve of the Parmesan cheese. Use a hand blender to blend the sauce until smooth.

    3. Mix up the pasta, the sauce and 2/3 of the Cheddar and Emmental cheese in a STAUB gratin dish (34 x 24 cm). Add an extra layer of cheese on top and put it into the oven for about 35 min until the cheese forms a nice brown crust.
