- 200 g basmati rice
- 1 red pepper
- 1 yellow pepper
- 1 zucchini
- 1 large carrot
- 1 onion
- 1 garlic clove
- 2 chicken breasts
- 3 tbsp olive oil
- salt, pepper
- 1 tsp paprika powder
- 1 tsp curry powder
- 2 tsp soy sauce
Also
- freshly chopped parsley or coriander for garnish
HOW TO MAKE IT
Preparation
- Prepare the rice according to the instructions on the packet.
- Clean the peppers and zucchini. Cut the peppers into strips and halve the zucchini lengthwise and then cut into slices. Clean and peel the carrot and cut into thin slices. Peel and finely chop the onion and garlic. Wash the chicken breasts, pat them dry and cut into strips.
- Heat 2 tablespoons of olive oil in a pan. Fry the chicken breast strips over medium heat, turning several times, for about 5 minutes. Season with salt, pepper, paprika, and curry powder, remove and set aside.
- In the same pan, heat the remaining olive oil, add the vegetables and fry over medium heat, turning several times, until they are just tender. Add the onion and garlic and fry briefly.
- Mix in the cooked rice and chicken and heat everything through. Season with soy sauce, salt and pepper. Sprinkle with parsley or coriander.
