Pasta Salad This salad is such a staple! It tastes best when served lukewarm, or when it’s marinated for several days to allow for the flavours to absorb nicely. Give this a go, and tag us in your photos!

INGREDIENTS

  • 500 g penne
  • Salt
  • 1 red bell pepper
  • 250 g cherry tomatoes
  • ½ bunch of arugula
  • 1 ball (125 g) mozzarella
  • 3 tbsp pesto genovese
  • Pepper
  • Balsamic vinegar, to taste

    HOW TO MAKE IT

    Step 1/3

    Cook pasta until al dente in plenty of boiling salted water according to the package instructions. Drain but collect a little pasta water.

    Step 2/3

    Wash and clean the bell pepper and cut into thin strips. Wash and halve the cherry tomatoes. Clean the arugula, wash, spin dry, and cut into a little smaller slices. Drain the mozzarella and cut into small pieces.

    Step 3/3

    Place the boiled pasta in a bowl and add the pesto with a little pasta water. Mix in the remaining ingredients and season well with salt, pepper, and vinegar. Serve immediately or vacuum and refrigerate in a suitable FRESH & SAVE Box.

    Tip

    Instead of a large ball of mozzarella, mini mozzarella balls can also be used.
