Rated 5 out of 5 by from Flexibiility is fabulous! This si terrific knife, especially for cleaning fish and cleaning up larger shole cuts of meat. Holds its edge well. The Four Star II line was made to last. It has a comfortable, slip-resistant grip and features a steel end cap that optimizes the balance of the knife. The blade is forged from premium custom stainless steel boosted with proprietary knife manufacturing technology. The benefit? It makes the blades hold their edge longer and avoid damage. Easily maintained. Hone regularly, sharpened only when needed. These knives will keep their edge. Dishwasher safe, but I recommend that they be hand washed; they will continue to look like new.

Rated 5 out of 5 by from Four Star II knives are very popular largely because of the unique molded handle that provides a comfortable nonslip grip. The added stainless steel end cap provides beauty and weighted balance. Forged in Germany from specially formulated steel the blade will retain its super sharp edge longer than most knives and resists corrosion and chipping. I enjoy using this filet knife for trimming fat, skin and bones in addition to filleting. The long thin blade with a sharp tip is strong yet flexible so it's perfect for getting into the small spaces to trim efficiently.

Rated 5 out of 5 by from Perfect for filleting your favorite fish! Skin comes right off as you glide this knife between skin and fish. Super flexible and can maneuver easily. Quality of the Four Star II knives is superior and a step up from Four Star in that this one has a nice endcap for better balance, and a nice finished look. Ice-hardened for super-sharp edge and keeps it durable and rust free. Curved handle means a good grip and comfortable in your hand.

Rated 5 out of 5 by from Flexible filleting knife! The 7" filleting knife is more flexible than the boning knife, you can almost bend it up to 45 degrees or further with care. It is perfect for filleting fish and great boning oversized meat. It's easy control from the handle to the tip of the blade. Exceptionally sharp, durable, and has comfortable handle with a beautiful logo-stamped end cap optimizes the balance provided by the bolster, resulting in safety, ergonomics and comfort.

The molded handle feels secure and smooth in the hand, the full bolster is familiar and the acute angle on the edge will always cut with precision. Made from German steel that has been ice hardened for better edge retention this is a high quality heirloom knife. Super thin this fillet knife has an amazing amount of flexibility to skim across bones and skin.

I also use mine to segment fruit and to remove the skin from tomatoes for special salads. The molded handle is light, but weighted with an end cap for perfect balance. Forged from high carbon German steel, it is incredibly sharp, will have great edge retention and will last forever.

The blade has been ice hardened so it starts sharper and stays sharper longer. I love how flexible this knife it, it can get between any meat and bone. The handle is comfortable, and the metal cap adds a nice balance to the knife.

The Four Star II has a great forged stainless steel blade, and with the steel being ice hardened, this filet knife will stay nice and sharp. The Four Star II has a nice handle to it, and a nice balanced weight, even with the smaller blade shape.
