Rated 4 out of 5 by from Contemporary and Effective I am a whetstone loyalist. But I do think these two-stage guided sharpeners are important to have in a well equipped kitchen. I use them for honing and light sharpening. I always recommend them - they are set to the proper angle of Western knives (not Japanese). They are easy to use (remember not to get to heavy handed). And because they are easy, people tend to use them more frequently, therefore maintaining their knives and increasing their enjoyment of cooking. Good reasons all, in my book.

It comes in handy when your knives need a little bit more then a honing steel can do for them but not quite ready to go on a stone. This sharpener takes off a small amount of steel and resets the original edge on it's own. Keep cooking and keep those knives sharp!

Two, whether you use a honing steel or not, your knives will eventually need to be sharpened. This is the perfect tool for that. It is a very easy, two step process (there is a video that shows you how). Wa La, your knives are good as new.

Can I use this to sharpen serrated knives?

Serrated cutlery can only be sharpened by a professional with special equipment. Handheld sharpeners are for fine edge cutlery only.

Is it suitable for sharpening Miyabi 5000MCD series knives, or is the sharpening angle not right? Is there a sharpener suitable for Miyabi 5000MCD apart from the stones?

The Miyabi 5000MCD series knives are angled at 15 degrees. The ZWILLING Twin sharpener has a 30-degree western angle and therefore it is not suitable for the Miyabi or any other Asian angled edge. What is the difference use between using slot "I' and "II"? Unfortunately I have lost our instructions.

Slot 1 is a steel for coarse sharpening, draw through 3-5 times, followed by the ceramic Slot 2 which gives the final fine edge. Good luck and watch your fingers!!

If I use the twinsharp duo stainless sharpener, do I need a honing steel also? Another question..do you need a different sharpener for the Japanese style knives, wit a 10 degree edge?

We recommend using a honing steel every time you use your knives. A honing steel realigns the microscopic serrations on the edge, extending the time needed between sharpenings and extending the overall life of the blade. A honing steel does not technically sharpen because it is not removing material. This sharpener is designed for western-style blades with a 15 degree angle (on either side). We make a Miyabi pull-through sharpener that is better suited for the sharper angles of Japanese and other Asian-style blades.
