Rated 5 out of 5 by from A Wonderful Knife This knife is really design for professional kitchen. It handle almost every single task. Extra comfortable because of the balance, the bolster. I feel like it really design for my hands. The steel of this knife is very special, I feel like I only have to use the honing steel and don't need to sharpen it (probably I will but not for the next 2 years I think because this steel last a very long time). I can cut a ripe tomato horizontally with this knife without holding the tomato in a very thin slice in one very smooth motion, that's why I am so impressed and satisfied!

Rated 5 out of 5 by from Legacy Knives I bought the whole set. Once my large hands got used to the handle size and configuration that perform exceptionally well. Manufacturing precision is superior. It comes with a very sharp edge but not at sharp as I like. I ran them through my finer stones and now they are amazing. They won't rust or pit no matter what's on them our how long I leave them out. So much so that I tested them overnight with all kinds of food on them and nothing. They are simply incredible. I've had them for a year and still have not resharpened them, only lightly on the honing steel that comes with the set. These are most likely my last set of knives I'll ever own and I'll be passing them on after I'm gone........legacy knives.

Rated 5 out of 5 by from Almost One of a Kind If you want the ultimate gift for a knife lover or want to treat yourself to something truly spectacular, 1731 is your knife! It is even more impressive in person than the photo. These knives were designed to signify the year the company started making knives. It is a limited edition, because a limited number of ebony trees where cut to make the handles. The steel used for the blades is the same material they used on space shuttle bearings; extremely durable and amazing edge retention. The blade design is the same as Pro with its incredibly comfortable curved bolster. The handle is solid ebony, an extremely dense wood, and is perfectly weighted and balanced.

Rated 5 out of 5 by from classic meets modern My family has always gone to Zwilling for quality knives for generations. This one was a treat for myself. I love that they used the original blade angle from their heritage blades matched with the improvements that they have made over time. The Conidur steel is extremely sharp and stays sharp seemingly forever. When it comes time to sharpen the high carbon content makes it easy to bring back to its razors edge. The curved bolster from the Pro line makes it so comfortable to hold and use for extended periods of time. The Ebony handle really sets it apart visually from other knives.

This steel is very special and unique in that it is more corrosion resistant and durable than other types of steel and is commonly found in ball bearings used in aerospace. The fine edge is honed to an impressive 12 and half degrees which is incredibly sharp and due to the steel it will stay that way use after use. Combined with the most comfortable curved bolster and a smooth nonslip ebony wood handle you will find this knife will give you paper thin slice and a life time of cutting enjoyment.

Rated 5 out of 5 by from oh WOW Most of us expect the Asian style knives to win the beauty contest not the German knives which are usually basic, durable and a little boring to look at. Not this one!! So well made it really is a piece of art. The balance is exquisite, the handle is smooth and fits perfectly in the hand and the exaggerated curve on the blade along with the curved bolster makes using this knife a privilege. Made with a steel that will hold an edge much longer than most this is an investment and will be the last 8" chef you will ever need to buy.

How does this knife compares in performance to the Kramer serie

This knife and our Kramer knives are our ultimate collector's styles. This item is made of our Cronidur 30 steel, hardened via oil quenching. It is extremely sharp and corrosion-resistant. Our Kramer knives are made of straight carbon steel. Kramer knives are designed to be ultra-hard and durable. Performance-wise, both this knife and the similar Kramer styles will cut beautifully for a lifetime, but the materials and maintenance are different.

At what angle is the Zwilling 1731 blade edge sharpened?

I used to seeing a Rockwell number signifying the steel's hardness. Does this apply to this new knife?

All of the knives in the TWIN 1731 Series are made of Cronidur 30 Steel. This steel has a Rockwell Hardness of 60. Our ZWILLING Special Formula Steel, used on the majority of our German-made knives, has a Rockwell Hardness of 57.
