TWIN 1731 is designed by the internationally acclaimed designer Matteo Thun. Years of work culminated in the ZWILLING wedge geometry that improves comfort and optimizes cutting technique. This innovative curved bolster is meant to be an extension of the hand, supporting the professional grip with thumb and index finger on the blade

Developed for bearings in aerospace engineering, the highperformance Cronidur 30 steel boasts impressive toughness and corrosion resistance that is 100 times higher than standard steel. Combined with ZWILLING's signature ice-hardening technique, this FRIODUR blade is exceptionally sharp and durable.

Each knife is precision-forged with ZWILLING's SIGMAFORGE process, resulting in a remarkably sturdy, balanced and flexible blade. With an incredibly sharp, laser-controlled edge, the knives are honed and hand-finished by the most skilled artisans.

Rated 5 out of 5 by from A Wonderful Knife This knife is really design for professional kitchen. It handle almost every single task. Extra comfortable because of the balance, the bolster. I feel like it really design for my hands. The steel of this knife is very special, I feel like I only have to use the honing steel and don't need to sharpen it (probably I will but not for the next 2 years I think because this steel last a very long time). I can cut a ripe tomato horizontally with this knife without holding the tomato in a very thin slice in one very smooth motion, that's why I am so impressed and satisfied!

Rated 5 out of 5 by from Legacy Knives I bought the whole set. Once my large hands got used to the handle size and configuration that perform exceptionally well. Manufacturing precision is superior. It comes with a very sharp edge but not at sharp as I like. I ran them through my finer stones and now they are amazing. They won't rust or pit no matter what's on them our how long I leave them out. So much so that I tested them overnight with all kinds of food on them and nothing. They are simply incredible. I've had them for a year and still have not resharpened them, only lightly on the honing steel that comes with the set. These are most likely my last set of knives I'll ever own and I'll be passing them on after I'm gone........legacy knives.

How does this knife compares in performance to the Kramer serie

This knife and our Kramer knives are our ultimate collector's styles. This item is made of our Cronidur 30 steel, hardened via oil quenching. It is extremely sharp and corrosion-resistant. Our Kramer knives are made of straight carbon steel. Kramer knives are designed to be ultra-hard and durable. Performance-wise, both this knife and the similar Kramer styles will cut beautifully for a lifetime, but the materials and maintenance are different.

At what angle is the Zwilling 1731 blade edge sharpened?

Our 1731 knives are sharpened to 12 degrees on either side.

I used to seeing a Rockwell number signifying the steel's hardness. Does this apply to this new knife?

All of the knives in the TWIN 1731 Series are made of Cronidur 30 Steel. This steel has a Rockwell Hardness of 60. Our ZWILLING Special Formula Steel, used on the majority of our German-made knives, has a Rockwell Hardness of 57.
