Rated 5 out of 5 by from Must have if you prep your own fish This is the knife I use take the skin off a side of salmon. Great flex and it stays sharp! Glides down the backbone. Better on larger cuts. I also use to cut back the fat cap on a brisket. Professional S is terrific line of knives. They feature a traditional straight bolster and a slightly smaller handle. As a result they are a little lighter than the new Pro line. I have owned one of these knives for years (more than 10). It has performed year in and year out, and I cook a lot. I sharpen it maybe twice a year, hand wash it and it looks like I never use it.

Rated 4 out of 5 by from This knife can take apart a pork shoulder in minutes (well maybe a couple of minutes). The blade is so flexible yet pops right back into shape. The knife is made from German Special Formula Steel and forged from one piece of steel so durable for a lifetime, and that's its warranty - lifetime. Blade is razor sharp and can get through any meat you can think of. Don't worry if you hit a bone, its been ice hardened so super strong. A little secret, I use this to cut rinds away from any kind of melons, works beautifully.

Rated 5 out of 5 by from great thin blade Its hard to find a high end fillet knife these days. This one is great. The blade is so thin and flexible. I can get right close to the skin to remove it in one fluid motion with no waste. The quality Zwilling German steel gives me confidence in the blade no matter how much i flex it. The classic three rivet handle is comfortable to hold in any position. It is very easy to sharp and gives great fillets every time.

Rated 5 out of 5 by from Super flexible This is the most flexible fillet knife I have ever used. We eat a lot of fish and having a good fillet knife is a must in our kitchen. This has enough flex to get between the skin and the meat or the meat and the bone cleanly and take very little flesh. Use this for skinning tomatoes or taking the pith from citrus rinds. I also pull this knife out when I want to cut a mango away from the pit.

Rated 5 out of 5 by from Great for more than just fish You need this knife even if you don't fillet your own fish because you can use it for so many different things around the kitchen. What I use this most for it is to take the skin off of tomatoes or melons because it flexes around the curves of the food. I love that it's long too because it gets through watermelon rinds really well.

Made from a special formula high carbon steel, knife is forged from a single piece of solid steel German made. It can almost bend up to 45 degrees or further with care, most control from the handle to the tip of the blade. Comfortable, sharp and durable. Dishwasher safe.

Nice longer blade than a boning knife, so that way I can make less cuts with a larger blade. A great forged blade, this knife will stay sharper and more durable longer than standard German knives.

The ice-hardening process makes for both super sharp blades and durability, which means it lasts long and stays sharp.
