My husband, who is not a cook, uses it for almost everything making a sandwich, cutting hot dogs, slicing the occasional vegetable. Every morning it slices either a banana or an apple. It holds it edge so well I think it makes him more confident in his knife skills. Professional S is terrific line of knives. They feature a traditional straight bolster and a slightly smaller handle. As a result they are a little lighter than the new Pro line. I have owned one of these knives for years (more than 10). It has performed year in and year out, and I cook a lot. I sharpen it maybe twice a year, hand wash it and it looks like I never use it.

It has a grip and just perfect weight as well. We gifted this prep knife, everyone loved it! This my go-to knife, it is perfect cutting, chopping and slicing meat, vegetables and fruits. It is perfect size, comfortable handle and sharpness is exceptional. Rated 5 out of 5 by from A solid Prep knife With the Pro “S” knife, you get a durable and sharp knife, thanks to the patented process of Zwilling’s forging and ice hardening of the steel, the Special Formula stainless steel becomes the most optimal German steel to use for a knife, so that way you can enjoy your Pro “S” Prep knife for years to come. A great starter knife, with the prep it’s a very versatile knife, with the smaller blade you can still chop and cut with it on a cutting board like it’s a chef knife but not as daunting in size.

They are forged from specially formulated steel to be corrosion resistant and have a sturdy feel. Because of the patented ice hardening process the edge will remain razor sharp while resisting cracks and chips. This 5.5 inch prep size is one of the knives I reach for often because it can handle all the of the tasks of a chef's knife when you don't need the full reach of the longer blade.

The prep knife can take on all those small projects such as mincing garlic, herbs and shallots. It also works great on small citrus and apples. Has a nice amount of knuckle clearance for maximum cutting performance. The Pro S line of knives are made from premium German steel, ice-hardened for longer edge retention and corrosion resistance.

The blade is razor sharp and can handle everything from apples and potatoes, to meats and cheeses. The handle with it's nice curve and three rivets is very comfortable and durable. I know it's a knife I will never have to replace.

Perfect choice for honey dew and cantaloupe melons. I like the full use of the blade with the curve in the bolster. Classic three rivet handle and very comfortable to hold.

Additionally, the bolster protects your fingers in the process.
