I wasn’t sure what to think of the Z15 serrations from reading reviews, but now that I own the knife and have been using it, I’m sure this knife works like a charm. I normally don’t buy serrated knives, but I needed a new bread knife. I’m not sure how much better than standard serrations this is, but it doesn’t tear what it’s cutting and that’s good enough for me. I appreciate that Zwilling invests in new technologies to make “better mousetraps.” Too, the overall geometry of the knife is modern and ergonomic. There is plenty of room for fingers above cutting board, so no need for an offset knive. It’s a nice, if infrequently used, addition to my Zwilling Pro collection.

Rated 5 out of 5 by from A simply excellent bread knife We tried two other bread knives before finally buying this one. The others--one by a well-known Japanese maker, the other 'top-rated' on Amazon--both were terrible compared to this one. Their blades flexed. Their teeth were too large, and the blade too thick. Both knives were tough to control. My wife cut herself badly with each! The blade on this knife, on the other hand, is very thin, very stiff, and its smallish teeth are perfect for the large, hard-crust loaves my wife bakes. It's a very controllable, predictable knife. It's simply excellent.

Bought a loaf of really crusty bread to try it out and much to my surprise it would barely cut the bread. Turned out there was a pronounced lip of steel right at the cutting edge which had not been removed during the sharpening process. I returned said knife for replacement and am awaiting a response from Henckels.

Its great for anything with a thicker/tougher outer layer and a softer interior.I us it not just for bread but also for cooked sausages and tomatoes. This new designed serration is extra sharp and the teeth alternate size keeping it sharp for a very long time.

I use this regularly for slicing whole crusty breads! I like to bake breads and buy whole loaves so this has been a true work horse for me! Love this knife

Well crusty bread, youve been warned. Now I'm thinking I need to learn to bake bread all over. i stopped because you had to wait so long from smell to slicing that It didn't seem worth it. THIS bread knife can slice hot bread,perfectly into slices, still warm so the butter just melts right in. That is what a good bread kife shoud do. GO GET ONE OF THESE right now! WOW

Rated 5 out of 5 by from Awesome knife I did a little research to see what sets this knife apart from a traditional bread knife. The Z15 serration ensures a precise, clean cut and slice. It also protects the smaller serration and keeps the knife sharp for a lifetime. Great knife, good value.

What are the advantages/disadvantages of Z15 serration compared to your "double serrated" knives? They both say they cut crusty bread while not crushing soft dough. Which will last longer? Does one cut better than the other? Thanks!

Hi, The Zwilling Pro Z15 Bread Knife is perfect for foods with a tough exterior and soft interior like crusty bread, tomatoes, and sausages. The Z15 serration is scalloped in such a way that it cuts cleanly and easily. The Zwilling Pro 8" Bread Knife has aggressive serrations, making short work of hard, crusty breads and firmer tomatoes.

Hesitating between this knife and the Miyabi Kaizen bread knife Does this Z15 serration cut better ? i understand that the Kaizen has a VG10 core hence harder steel also..

Both options will perform great. Harder steels, like in our Miyabi knives, will retain their edges for longer, but they are more brittle and prone to chipping if not used properly.
