To tackle medium sized foods, this rocker makes it easy and the hollow edge divets gracefully guides food up and off the blade. The unique Pro bolster and ergonomic handle make it comfortable to go any length of time when you're prepping.

Its the perfect size for her small hand an because the blade is rounded its easy for her to use a rocking motion. And the curved bolster reminds her to use a pinch grip every time she handles the knife.

Rated 5 out of 5 by from Best Knife I've Ever Used This is a hybrid of a santoku & a western chefs knife. It's the best knife I've ever used! Perfect weight & feels very comfortable in my hand. The balance guides you & facilitates correct usage. Easy to use whether cutting, chopping or mincing. The pinch grip is comfortable & there's good knuckle clearance. The indentation at the top gives the top hand a place to rest when rocking. I've used this for cutting very hard vegetables (carrots & squash) as well as tiny items (olives) with ease. It was perfect with cherry tomatoes & didn't cause them to burst. Highly recommend this for everyone!

The curved bolster is a perfect fit for the pinched grip and it allowed me to rocking through my cuts with ease and fatigue free cutting. Love this knife!

This knife shape and construction is perfect for prepping almost all vegetables. The arc of the blade facilitates the Western style rocking motion. The width of the blade from tip to heel provides stability when cutting into larger foods - like onions, squash and melons. And the hollow grooves reduces the sticking of wetter vegetables.

It is balanced, very sharp, a pleasure to use and beautiful. This knife is now my favorite. I believe the design of the blade brings a different cutting style that is pure pleasure to use; it glides thru meats and vegetables...the slightly rounded cutting edge and pointed tip are a new dimension.

The most comfortable bolster you'll ever hold and this knife allows you to smoothly transition between chopping motion and a rocking motion. This knife will smoothly cut through whatever you put in front of it.

I have one, and love it. I prefer to hone my own knives - could you please tell me the blade edge angle? Thanks

What sharpness degree is the blade? 15 or 10 degrees. Do I need a special sharpener? I currently have a 15 degree sharpener.

The blade angle on all of our Santoku knives is approximately 19°-24°, as close to 10° on either side as possible. Most pull-through sharpeners will not work. Santoku and other Japanese knives are best sharpened with stones or steels.

what is the edge degree for sharping? I remember this one is special. And can you make a master list for the pro line well all lines PLEASE
