Forged from remarkable expertise, the Kramer by ZWILLING Meiji knife series is a collaboration between ZWILLING J.A. Henckels and Bob Kramer, the first Master Bladesmith to specialize in kitchen cutlery.

The potent core of FC61 fine carbide stainless steel is protected by 100 layers of nickel and stainless steel. Beneath its distinctive exterior, Kramer's distinctive etched ladder Damascus pattern provides added durability. Thanks to an innovative, ice-hardened process, the FRIODURx2 blades offer remarkable durability, sharpness, and cutting performance.

The ergonomic charcoal Pakkawood handles have a complex curvature that mirrors the palm, ensuring a secure and supremely comfortable grip. Exquisite to hold and behold, the handles feature a decorative center pin handcrafted in Kramer's Washington workshop.

Its core is made from the durable FC61 steel and surround by an additional hundred layers of steel for extra protection. The width of the blade is typical Bob Kramer as he believes all knives should have multiple functions - use this as a scrapper and you won't have to interrupt your prep work.

Being fortunate enough to own one of these is a privilege; sharp, well-balanced, and great to work with. Ambidextrous design makes it a must have!

Rated 5 out of 5 by from Superior Durability This Bob Kramer design is simply stunning and so durable. It has FC61 steel and uses the Damascus pattern for added durability. This knife is one of the sharpest you'll own, but luckily it also is extremely durable. I have never had any issues with chipping.

Rated 5 out of 5 by from Beauty and Braun The Meiji line is as tough as it is beautiful. Made of 101 layers of steel, and ice hardened in the process, this tough knife will work hundreds of menus before it needs to be sharpened. The patterned blade is reminiscent of Damascus layering. The bright stainless is eye catching. I smile whenever I use one. The handle is a little longer than traditional handles. Great for larger hands or folks who don't use a pinch grip. The 8-inch chef's knife isn't 'over-arc-ed'; has just enough curve for my liking.

Rated 4 out of 5 by from not a traditional Kramer. This is a very edgy Kramer knife. The shape of the blades seems true to style but the handle is so unique. Now that he has ventured into Asian Cutlery, I am excited to see it showing up in his production lines. This has the feeling of his custom asian knives he now makes but (without the incredibly creative blades) but at a price more can afford.

Rated 5 out of 5 by from comfortable handle As with all Bob Kramer knives, the quality of the blade is exceptional. This one has an FC61 core which holds an extremely sharp edge while remaining durable. But the handle on the Meiji is what makes this even more special, it is shaped to mirror the feel of the palm of your hand for the most comfortable cutting experience.

Does this knife have equal 15 degree angles on both sides or only one?
