The KRAMER by ZWILLING EUROLINE Carbon Collection is the first line created with Master Bladesmith Bob Kramer. With over 18 years of forging experience, Bob has partnered with ZWILLING J.A. Henckels to craft a knife that is an exact replica of the straight carbon steel knives made in his Olympia, Washington workshop.Bob's design has an extremely wide blade to maximize knuckle clearance for larger hands and for cutting through large produce and piles of food. Chopped food can easily be transported with this impressive, broad blade.A material nearly lost to the home kitchen, straight carbon steel requires knowledge and care to maintain. In return, owners will be rewarded with a sharpness and keenness of edge that only straight carbon can deliver. Hand-finished with a 3-step process by the most skilled Japanese artisans, the outstanding blade is paired with a stunning handshaped Grenadille wood handle with brass rivets and a Bob Kramer mosaic pin.

Rated 5 out of 5 by from Exceptionally Sharp! This Carbon slicing knife cuts food comfortably that is so satisfying to your hand as well! Perfect knife for family size roast beef and pot roast, a big chunk of brisket corned beef, will effortless carve turkey on Thanksgiving dinner. This Carbon steel knife needs extra care and maintenance however this is a knife that almost never needed to sharpen for a while. Sharpness and keenness of edge 100% carbon steel has it, and exceptionally high sharpness. This knife design has an extremely wide blade to maximize knuckle clearance for cutting through large produce and piles of food.

Rated 5 out of 5 by from A special knife for special uses A carving knife might not be the most used knife in your kitchen but typically it's getting pulled out for special occasion dinners of roasted meats or even large cakes so it makes sense to invest in a special knife for those times! This Bob Kramer Euroline carving knife is made from straight carbon steel which will stay sharper longer and is easier to sharpen when the time comes. The beautiful wood handle with brass accents looks elegant and is comfortable to use.

Rated 5 out of 5 by from Cadillac Steel Carbon is the cadillac of steel according to Bob Kramer. It has been the steel of choice for years because it has an incredibly sharp blade that is super easy to keep sharp. This carving can slice a piece of turkey thin enough to see through. The large handle is a beautiful dark wood and feels great in my hand. It requires more attention; wash and dry right away, but you're rewarded with a knife you will love and share with future generations.

Rated 5 out of 5 by from Masterpiece This is an outstanding blade designed for precision cutting and slicing and lots of it. A typical Kramer handle which is a little chunky and has a nice contour shape for comfort. Slice the most pristine pieces of fish to the the more hefty, large cuts of meat. Super sharp, durable, skillfully crafted. The true carbon steel takes a little getting use to, but it’ll be worth it! Magnificent cutting blade.

Rated 4 out of 5 by from zwilling employee This is an amazing knife to cut with but keep in mind it requires a lot more maintenance than any typical stainless steel blades. The pure carbon is very prone to patina (rust) and the true wood handle requires regular oiling so that the wood won't dry out and shrink from the rivets. If you put in the care you will be rewarded for a long life on your knife.

With the straight carbon steel, this knife will stay sharp much longer and is a lot more durable than most Japanese knives. The handle is nice for easy grip on the blade while slicing meat, fish, fruits or veggies. The carbon steel patinas, giving it nice character down the road. It’s an amazingly sharp knife.

Quite versatile and with the long thinner blade, try skinning up some melons to add to your buffet. Can’t go wrong with complimenting your set with this beautiful piece!

Rated 5 out of 5 by from This carving knife is wonderful. Carbon steel keeps a sharp edge for a long time and easy to re-sharpen. The beautiful wood handle is comfortable and looks great with the brass rivets. Zwilling sells a carbon steel maintenance kit, I’d suggest getting the kit. It’s a fantastic way to keep the blade and handle in great shape.
