The KRAMER by ZWILLING EUROLINE Carbon Collection is the first line created with Master Bladesmith Bob Kramer. With over 18 years of forging experience, Bob has partnered with ZWILLING J.A. Henckels to craft a knife that is an exact replica of the straight carbon steel knives made in his Olympia, Washington workshop.Bob's design has an extremely wide blade to maximize knuckle clearance for larger hands and for cutting through large produce and piles of food. Chopped food can easily be transported with this impressive, broad blade.A material nearly lost to the home kitchen, straight carbon steel requires knowledge and care to maintain. In return, owners will be rewarded with a sharpness and keenness of edge that only straight carbon can deliver. Hand-finished with a 3-step process by the most skilled Japanese artisans, the outstanding blade is paired with a stunning handshaped Grenadille wood handle with brass rivets and a Bob Kramer mosaic pin.

Rated 5 out of 5 by from A piece of art! This blade is made our of straight carbon steel 52100, one of the strongest, most durable metals made. It is designed to Master Blade Smith Bob Kramer's exacting specifications, the closest copy to his privately made knives you will find. A special oil-quenching hardening process is used so all possible stresses in the knife are removed. This knife will not only glide through the toughest crumb with out damaging the inside it will go through anything with a hard exterior and soft interior beautifully.

We were fortunate to partner with him to create a line for home cooks and chefs, of some the most exotic steels and alloys. This one is straight carbon steel and will create a patina that is unique to you and your uses, which is a great way to kind of customize it. Beautiful, durable and sharp!

Rated 5 out of 5 by from If you’re all in on this carbon steel collection, you might as well go ALL-IN! The classic bread knife, a nice addition to the bare necessities needed in any kitchen. Much more than just a ‘bread’ knife, this was a go to on my line during a lunch service; used to prep my tomatoes, lettuce, onions, and pickles; then easily slice through hand-crafted, hot and cold sandwiches for a couple hours. Highly recommended!

This Euroline bread knife is no exception crafted from straight carbon steel for the hardest. sharpest blade available. The unique serrated edge design will effortlessly move through the exterior crust without crushing the softer interior. The handle is Grenadile wood with brass accents for a comfortable grip with a gorgeous look.

Rated 5 out of 5 by from It doesn't get any better Bob Kramer Carbon are the ultimate knives. They're made from the cadillac of steel which is crazy sharp and stays sharp. It's the same design of Bob's handmade knives at a fraction of the cost. The handle is simply amazing; beautiful wood, sexy brass rivets including a "Bob Special", the center one, which represents peace and culture. It truly is a collector's item but one that you will definitely want to use.

With the straight carbon steel, this serrated knife will stay sharp much longer and is a lot more durable than most Japanese knives. The handle is nice for easy gripping on the blade while slicing bread, meat, fruits or veggies. The carbon steel patinas, giving it nice character down the road. It’s an amazingly sharp knife.

Rated 4 out of 5 by from zwilling employee This is an amazing knife to cut with but keep in mind it requires a lot more maintenance than any typical stainless steel blades. The pure carbon is very prone to patina (rust) and the true wood handle requires regular oiling so that the wood won't dry out and shrink from the rivets. If you put in the care you will be rewarded for a long life on your knife.

While stainless steel is a great material for knives and easier to care for, Carbon steel stays sharper longer, and has a tougher edge. A Carbon Steel knife is the ultimate performance tool.

Hi, It says that there is a 15 degree angle per side on this knife - does that mean that it can be sharpened with a regular whetstone even though it has a serrated edge? If not, how would you sharpen it?

Serrated edged knives cannot be sharpened using the same techniques as a straight blade. To sharpen a serrated blade, you would need a special device or send your knife to a professional sharpener that specializes in serrated blades.
