The KRAMER by ZWILLING EUROLINE Carbon Collection is the first line created with Master Bladesmith Bob Kramer. With over 18 years of forging experience, Bob has partnered with ZWILLING J.A. Henckels to craft a knife that is an exact replica of the straight carbon steel knives made in his Olympia, Washington workshop.Bob's design has an extremely wide blade to maximize knuckle clearance for larger hands and for cutting through large produce and piles of food. Chopped food can easily be transported with this impressive, broad blade.A material nearly lost to the home kitchen, straight carbon steel requires knowledge and care to maintain. In return, owners will be rewarded with a sharpness and keenness of edge that only straight carbon can deliver. Hand-finished with a 3-step process by the most skilled Japanese artisans, the outstanding blade is paired with a stunning handshaped Grenadille wood handle with brass rivets and a Bob Kramer mosaic pin.

Rated 5 out of 5 by from A beast of a knife This 10" chef knife is truly a beast! An authentic Bob Kramer design, it's meant to withstand long hours of use. The large, wooden handle fits perfectly in your hand. The wide blade is perfect for cutting through almost any size fruit of vegetable. Carbon steel is rarely used anymore because it requires more care, but it is well worth the investment of time. If you want, you can let the blade develop a grey patina that will protect it. Otherwise you wash and dry and it will stay nice and shiny. This blade is incredibly sharp and is very easy to maintain on a whetstone. This is a knife that you will treasure for years.

Rated 5 out of 5 by from Cadillac of Steel That's how Bob Kramer describes carbon steel. It's the perfect steel that is so incredibly sharp it will cut through anything with ease. It is also very easy to maintain that edge unlike some harder steels. The big blade makes it easy to chop large vegetables or piles of food. The handle is equally beautiful and I love that the pin in the handle comes from Bob Kramer himself, such a personal touch. It does require a little extra care, unlike stainless steel. I always wash and dry it as soon as I'm finished with any task. The extra care is totally worth it to me.

Rated 5 out of 5 by from Unbelievably sharp! This knife is an absolute gem! This thing is so sharp and holds the edge even after many uses. Carbon knives require more care, but if you are willing to commit to taking proper care of your tools, then you will absolutely love this blade. Unparalleled Zwilling quality with Bob Kramer design, it's a work of art! Extra wide blade so, if you have large hands, you won't hit your knuckles against the cutting board. One of my favorite Zwilling knives in my collection.

Rated 5 out of 5 by from The real deal I have been a follower of Bob Kramer. It seems this is as close to what he creates in his workshop in Washington as it gets. It's not for the everyday home cook. The steel is really sharp and stays sharp, but it can patina with normal use. I think that's character, others may think that's a defect. The handle is real wood, so it requires some love depending on the climate you live in. The brass detail is so beautiful. I feel so fortunate to own one.

Rated 5 out of 5 by from More than a prep! This 6" Chef is a ample sized knife for every day needs in the kitchen. Longer and wider than a prep knife this can still do the small work such as mincing and dicing but can also take on bigger items like acorn squash, leeks and onions. Made by Master Blade Smith Bob Kramer this knife will not disappoint. Carbon steel stays sharper longer, is easier to sharpen and has a tougher edge. A Carbon Steel knife is the ultimate performance tool.

Rated 5 out of 5 by from Carbon Classic Greatness All the great knives are carbon steel. It is harder and harder to find a carbon knife these days. While stainless steel blades require less care, true carbon blades are a world unto themselves. They stay super sharp and are very easy to resharpen. The Bob Kramer design asthetic is present through every aspect of the knife. The double bevel design really adds to the balance. The wide blade gives me gread knuckle clearance when chopping on a cutting board. I love the grenedile handle as well and the gold accents.

Are the Kramer Eurolines, more specifically the carbon steel one, still in production or are they being phased out by the newer Meiji collection.

I have this knife on order. Would you recommend the 32602-001 sharpener for this knife? Or any other sharpener. I’m not good with wet stones yet.

Kramer knives are made of a different steel formula than our Zwiling/Twin brand, so 32602-001 and our other handheld sharpeners may not be as effective as a stone. We typically recommend purchasing a sharpener within the same brand/style as your knives. I'm looking to make a saya for a friend who has this knife, I want it to be a surprise so I can't ask him to use the knife since he lives in another state. Are you able to provide detailed specs of the knife so I can attempt to make a saya that fits snug?

I thought carbon steel knives needed only hand honing with a steel.  Are you saying they must be returned periodically for professional sharpening?  How often is this recommended for normal household use and what is the cost?

Honing will keep the blade straight and help the knife retain its edge. We do recommend having all of all of our (non-serrated) kitchen knives professionally sharpened 1-2 times a year. Being straight carbon steel won't this knife be prone to rusting ?

Yes, carbon steel is prone to rusting if not cared for properly. These knives will develop a natural black or blackish-gray patina over time which will help stave off rust and other corrosion.
