The KRAMER by ZWILLING EUROLINE Carbon Collection is the first line created with Master Bladesmith Bob Kramer. With over 18 years of forging experience, Bob has partnered with ZWILLING J.A. Henckels to craft a knife that is an exact replica of the straight carbon steel knives made in his Olympia, Washington workshop.Bob's design has an extremely wide blade to maximize knuckle clearance for larger hands and for cutting through large produce and piles of food. Chopped food can easily be transported with this impressive, broad blade.A material nearly lost to the home kitchen, straight carbon steel requires knowledge and care to maintain. In return, owners will be rewarded with a sharpness and keenness of edge that only straight carbon can deliver. Hand-finished with a 3-step process by the most skilled Japanese artisans, the outstanding blade is paired with a stunning handshaped Grenadille wood handle with brass rivets and a Bob Kramer mosaic pin.

Rated 5 out of 5 by from Another incredible knife designed by master knife-smith Bob Kramer. The Santoku is one of my favorite knives because the blade is broader than a chef's knife so it is perfect for chopping but with a slight curve at the tip on this one I can still comfortably do a horizontal rocking motion for slicing. This blade is made from straight carbon which demands a bit more care with washing and drying but is worth every effort because there really is no substitute for the hardness and edge retention of straight carbon. The handle is made from Grenadile wood and is mounted to provide comfortable knuckle clearance. The brass accents make this a truly beautiful tool.

Rated 5 out of 5 by from Not only beautiful but so functional! This blade is made of straight carbon steel 52100, one of the strongest, most durable metals made. It is designed according to Master Blade Smith Bob Kramer's exacting specifications, the closest copy to his privately made knives you will find. A special oil-quenching hardening process is used so all possible stresses in the knife are removed. As with all Bob Kramer knives you can turn the blade over and use it as a scraper, so no work interruption. Handle is made from Grenadile wood and fits larger hand beautifully.

Rated 5 out of 5 by from It's a Kramer! Kramer carbon is one of the most incredible knives I've ever owned. Very few knives are made out of carbon steel anymore because it requires a little extra care. But you will never own a knife that is so incredibly sharp, but so easy to keep sharp; that's the carbon secret. The blade is wide and the handle large which makes it comfortable to hold and easy to cut through even the largest piles of veggies. The handle is made from a dark, dense wood so it's beautiful and durable.

Rated 5 out of 5 by from great sharp santoku The design and function of this knife is everything you would want. The pure carbon blade is extremely sharp and stays that way for a long time. The carbon also makes it very easy to maintain. The Kramer design aesthetic of the double taper and wide handle make it very well balanced and comfortable to hold. I love the brass accents and the Kramer logo mosaic in the handle. The slim profile of the blade makes accurate thin cuts and slices with ease.

Rated 5 out of 5 by from Carbon Asian Knife! This is an Asian knife, I like Santoku! This is a stay sharp knife, a carbon steel. Super sharp to cut through meat, vegetables and fruits, I liked the wide blade it covers more food and maximize knuckle clearance for cutting through large produce. Sharpness and keenness of edge 100% carbon steel has it. It has a 61 Rockwell Hardness equal exceptional edge retention, and it's traditional 3-step hand sharpening for exceptionally high sharpness.

Rated 5 out of 5 by from The best Carbon Santoku knife A great alternative blade by Kramer, this santoku has a wider blade than most santoku but makes it perfect for chopping everything. With the straight carbon steel, this knife will stay sharp much longer and is a lot more durable than most Japanese knives. The handle is nice for easy grip on the blade while slicing fruits or veggies. The carbon steel patinas, giving it nice character down the road. It’s an amazingly sharp knife.

Rated 5 out of 5 by from Three virtues Santoku means "three Virtues"- This knife is all about the feel and extreme sharp blade. You can use the racket grip or pinch grip with this handle. Comfortable with both. Wipe it with a wet cloth and dry immediately. It's a signature Kramer- wider blade and handle than others of this style in the market. It's an investment , but well worth it!

Rated 5 out of 5 by from The broad blade of this santoku permits slicing, dicing, and mincing through large items and thick piles on the cutting board. Straight carbon provides strength and unmatched edge retention. And the handle shape mimics the shape of palm. Both are deserving of extra TLC in the form of hand washing and immediately drying, along with regular oiling.
