The KRAMER by ZWILLING EUROLINE Carbon Collection is the first line created with Master Bladesmith Bob Kramer. With over 18 years of forging experience, Bob has partnered with ZWILLING J.A. Henckels to craft a knife that is an exact replica of the straight carbon steel knives made in his Olympia, Washington workshop.

Bob's design has an extremely wide blade to maximize knuckle clearance for larger hands and for cutting through large produce and piles of food. Chopped food can easily be transported with this impressive, broad blade.

A material nearly lost to the home kitchen, straight carbon steel requires knowledge and care to maintain. In return, owners will be rewarded with a sharpness and keenness of edge that only straight carbon can deliver. Hand-finished with a 3-step process by the most skilled Japanese artisans, the outstanding blade is paired with a stunning handshaped Grenadille wood handle with brass rivets and a Bob Kramer mosaic pin.

Rated 5 out of 5 by from The greatest american knifesmith You will be amazed by this beautiful carbon steel knife by Bob Kramer. The biggest benefit of high Carbon steel is the hardness. It is easier to sharpen and you can really feel that when using this blade. This knife will require more maintenance, like washing and drying to avoid corrosion spots, but it is worth the effort.

This blade cuts so well and the handle can fit even the largest of hands with ease. It is definitely worth the investment.

Rated 5 out of 5 by from Cadillac of Steel That's how Bob Kramer describes carbon steel. It's the perfect steel that is so incredibly sharp it will cut through anything with ease. It is also very easy to maintain that edge unlike some harder steels. The big blade makes it easy to chop large vegetables or piles of food. The handle is equally beautiful and I love that the pin in the handle comes from Bob Kramer himself, such a personal touch. It does require a little extra care, unlike stainless steel. I always wash and dry it as soon as I'm finished with any task. The extra care is totally worth it to me.

Rated 5 out of 5 by from I have this knife hanging on my magnetic knife bar close at hand always. Due to the high carbon content, you need to wash and dry this knife when done with your tasks. Its durablity and sharpeness cannot be matched and if you care for it, you will have a beautiful knife to last decades. These can take on a patina, but many chefs find this to be a personalization that sets each one apart from the other.

Carbon knives require more care, but if you are willing to commit to taking proper care of your tools, then you will absolutely love this blade. Unparalleled Zwilling quality with Bob Kramer design, it's a work of art! Extra wide blade so, if you have large hands, you won't hit your knuckles against the cutting board. One of my favorite Zwilling knives in my collection.

Rated 5 out of 5 by from The real deal I have been a follower of Bob Kramer. It seems this is as close to what he creates in his workshop in Washington as it gets. It's not for the everyday home cook. The steel is really sharp and stays sharp, but it can patina with normal use. I think that's character, others may think that's a defect. The handle is real wood, so it requires some love depending on the climate you live in. The brass detail is so beautiful. I feel so fortunate to own one.

They may not look great after all these years, but the carbon steel is like no other, it's sharp, holds an edge and is easy to re-sharpen. It can patina over time, but that only adds to the heirloom quality. Now you can have that same steel in a Bob Kramer knife.

Is the brass used on this knife lead free?

I have this knife on order. Would you recommend the 32602-001 sharpener for this knife? Or any other sharpener. I’m not good with wet stones yet.

Kramer knives are made of a different steel formula than our Zwiling/Twin brand, so 32602-001 and our other handheld sharpeners may not be as effective as a stone. We typically recommend purchasing a sharpener within the same brand/style as your knives. I thought carbon steel knives needed only hand honing with a steel.  Are you saying they must be returned periodically for professional sharpening?  How often is this recommended for normal household use and what is the cost?

Honing will keep the blade straight and help the knife retain its edge. We do recommend having all of all of our (non-serrated) kitchen knives professionally sharpened 1-2 times a year. Being straight carbon steel won't this knife be prone to rusting ?

Yes, carbon steel is prone to rusting if not cared for properly. These knives will develop a natural black or blackish-gray patina over time which will help stave off rust and other corrosion.
