Description

Kanren, which means “connection” in Japanese, is a collection that beautifully illustrates the union of German engineering with Japanese craftsmanship. This long thin carving knife is ideal for evenly slicing through meat and poultry. The FC61 core is embedded in 48 layers of stainless steel which make up the unique Damascus pattern on the knife, protecting the blade from corrosion and chipping. The cutting edge is Honbazuke-honed in Seki, Japan, a three-stage grinding, sharpening, and polishing process that results in razor-like sharpness. With its curved bolster and comfortable black linen Micarta handle, this knife delivers the ultimate in ergonomic, fatigue-free cutting.

The thin, razor sharp blade will slice through your holiday turkey, ham or roast with ease leaving you with less hand fatigue and beautiful, thin slices of meat. German Engineering and Japanese beauty and sharpness! This knife is not only beautiful with its Damascus blade, but its razor sharp, true to Japanese knives. Unlike most Japanese knives, it's made of very durable, chip resistant steel that protects that thin, sharp edge. I love the western style handle that's comfortable and is made of Micarta that has the look and feel of wood, but is as durable as a synthetic material. The curved bolster, an innovative feature of the Zwilling Pro knives, makes it incredibly comfortable in every hand.

The core of the blade is made from FC61 carbide steel and its surrounded by an additional 48 layers which create a beautiful Damascus pattern. Not only beautiful, the blade is razor share and durable for the long haul. If you hit a bone during carving don't worry you won't damage the blade. The handle is made from black linen micarta, it is comfortable and easy to grip.

The carving knife makes my life easier and this carving knife in particular, is razor sharp and will glide through what ever you use it on. The FC61 steel and the special ice-hardening process, creates a very sharp knife that is durable and will last for years to come, and it looks good doing it!

With the 48 layers of Damascus pattern steel with the FC61 core, this knife is well made, staying sharp and much more durable, bringing together the best of German and Japanese cutlery. The look is very appealing, a showstopper to impress your guest at holiday parties.

Use this for that holiday roast or turkey but don't forget to bring it out during BBQ season to slice that brisket.These knives are an exceptional example of German engineering melding with Japanese craftsmanship. Each knife is made from FC 61 steel which is used in razor blades, which speaks to its cutting edge retention, chip resistance and strength. A total of 48 layers of beautiful Damascus steel surround the core. Hand sharpened and honed, each one of these knives are hand crafted by 46 Japanese artists in Seki Japan. The curved bolster enables the whole length of the blade to be used for cutting and chopping and also creates a comfortable grip to ease wrist fatigue. The linen Micarta handle has a gorgeous wood look that feels firm and safe to grip. The impeccable balance, weight, stunning appearance and acute edge makes Kanren a must have knife.
