Description

Kanren, which means “connection” in Japanese, is a collection that beautifully illustrates the union of German engineering with Japanese craftsmanship. This workhorse knife is designed to do everything in the kitchen, including chopping, slicing, and dicing. The FC61 core is embedded in 48 layers of stainless steel which make up the unique Damascus pattern on the knife, protecting the blade from corrosion and chipping. The cutting edge is Honbazuke-honed in Seki, Japan, a three-stage grinding, sharpening, and polishing process that results in razor-like sharpness. With its curved bolster and comfortable black linen Micarta handle, this knife delivers the ultimate in ergonomic, fatigue-free cutting.

Rated 5 out of 5 by from Why not have a knife that basically does it all? This beautiful chef's knife is sure to be the favorite and the go-to in the kitchen for tackling any and all prep tasks. The ergonomic, black micarta handle offers incredible comfort and balance for the whole knife. In the middle, the innovative curved bolster will take your pinch grip to new heights as it is designed for control and optimal comfort as well. Lastly, the incredible Damascus blade ensures long-lasting sharpness and durability for years to come. This is meant to be the most used knife in the kitchen and that's why Zwilling made it one of the best chef's knife out there.

This knife feels perfectly balanced and the handle is extremely comfortable in your hand. The blade came extremely sharp when I received it, and it stills feels as sharp as day 1! I've gotten so many compliments on how nice this knife looks. I would highly recommend this to anyone!

This is knife is not only beautiful with its Damascus blade, but it's razor sharp, true to Japanese knives. Unlike most Japanese knives, it's made of very durable, chip resistant steel that protects that thin, sharp edge. I love the western style handle that's comfortable and is made of Micarta that has the look and feel of wood, but is as durable as a synthetic material. The curved bolster, an innovative feature of the Zwilling Pro knives, makes it incredibly comfortable in every hand. This great chef knife will be a workhorse in your kitchen. Its incredibly sharp blade can chop, dice or slice any fruit or vegetable, and can comfortable slice meat too.

Rated 5 out of 5 by from If you could only have one knife in the kitchen it would have to be an 8" chef's knife, it can do anything in the kitchen. The Kanren 8" chef's knife is not only beautiful but functional. The core of the blade is made from FC61 and its surrounded by an additional 48 layers of steel which creates a beautiful Damascus pattern and extremely durable. Miyabi borrowed the curved bolster from Zwilling and added it to this knife. It is natural to hold with a pinch grip. The handle is made from black linen micarta and fits easily into any hand.

Rated 5 out of 5 by from The chef knife is the most used knife in the kitchen so you want that knife to be comfortable in your hand, you want it to be sharp and you want that sharpness to last. The Kanren chef knife is made of FC61 steel and goes through a special ice-hardening process which makes the knife hard, durable and razor sharp. The bolster is curved which supports the pinch grip and is fatigue-free so you can work and be safe and fatigue free! This knife is not only beautiful but also an example of what a great East meets West knife is made of.

The three riveted symmetrical handle is more akin to a western knife. A curved bolster promotes a pinch grip for controlled cutting. Great weight and balance for all your kitchen cutting tasks.
