The knives are made of proprietary special formula steel that has been perfected for over 280 years. Combined with ZWILLING's signature ice-hardening technique, these FRIODUR blades are harder, sharper, they will NOT STAIN or chip and they retain their sharpness longer. Precision-forged from a single piece of steel, the SIGMAFORGE knives have an exceptionally sturdy, balanced and flexible blade.

Which sharpener should I use with this knife?

We always recommend using a sharpening/honing steel often. When the blade is dull and needs resharpening, you can use a pull-through sharpener or waterstones. Please note that we sharen our blades to 15 degrees on each side. Any of our ZWILLING/TWIN pull-through sharpeners are appropriate. We also offer a mail-in sharpening service where we use the factory machines to resharpen blades by hand.
