The knives are made of proprietary special formula steel that has been perfected for over 280 years. Combined with ZWILLING's signature ice-hardening technique, these FRIODUR blades are harder, sharper, they will NOT STAIN or chip and they retain their sharpness longer. Rated 5 out of 5 by from Nice filet Great addition to fill one of those empty slots in our block. The filet is long and extremely flexible. Great for working around bones. Segments an orange easily too. Four Star is comfortable and lighweight. Really sharp.

Rated 4 out of 5 by from Every one Needs a Good Filet Knife There are so many uses for a filet knife in the kitchen. Yes filleting a beef roast or taking apart a pork butt but there are other secret uses. I use mine to separate melon from the rind once it is cut into slices. I am able to get the most fruit off the rind with this knife.

Rated 5 out of 5 by from I bought a Zwilling knife set when I was in the Army stationed in Germany in the late '80s at the Post Exchange in Frankfurt. There was a Paring knife, a Slicing knife, and a Fillet knife with a sharpening steel.I have kept them sharp and use them every day. I guess I have about another 10 years to go on them if they last 40 years.

What tis the difference between the Four Star and the Twin Signature? I have a set of the Twin Signature Knives and was looking to add a boning knife - noticed there's a slight difference in the price between but can't see any difference

Both series use the same steel and are manufactured in Germany, however there are two main differences between the series. First, the Four Star series is forged, while the TWIN Signature series is stamped. Second, the Four Star series has a molded polypropylene handle with a 3/4 tang (permanently bonded), the TWIN Signature series has a three rivet polymer handle with an exposed full tang.
