Additional Information

FOUR STAR is the top-selling knife series of ZWILLING J.A. Henckels worldwide. Honed and hand-finished by the most skilled artisans, this celebrated collection is the model of safety, ergonomics, and comfort. Thanks to their seamless transition from bolster to handle, the knives are comfortable to use for long periods of time. The bolster provides the right balance while acting as a safe finger guard.

The knives are made of proprietary special formula steel that has been perfected for over 280 years. Combined with ZWILLING's signature ice-hardening technique, these FRIODUR blades are harder, sharper, they will NOT STAIN or chip and they retain their sharpness longer. Precision-forged from a single piece of steel, the SIGMAFORGE knives have an exceptionally sturdy, balanced and flexible blade.

ZWILLING J.A. Henckels Four Star 5.5 -inch Flexible Boning Knife is rated 4.8 out of 5 by 16.
Rated 5 out of 5 by from Just enough flex I like this knife because it has just enough flex to get a chicken breast out in one big beautiful piece. A super rigid knife would be great at the joints but not so much at the rib bones. These are small nuances, but if you want a knife that meets the needs of professional chef's then this one should be top on your list. Softer, easy-to-grip round-edged handle. Good weight.

Rated 5 out of 5 by from A boning is also a filleting. I have this Four Star boning knife, and I enjoyed using it. I even used it for filleting because it is not too long for my hand. I can trol the blade better than a longer one. This is such a great knife and I could use it to slice fruits and vegetables as well.

Rated 4 out of 5 by from Gets the job done I work in a fish shop.. we got 4 of these on standby.. I love the blade stifness for filletting.. for deskinning its a bit hard maybe but u get used to it. I wish the finish on the back of the blade would be a bit smoother so id get a little less wear on the fingers.. other than that its a perfect blade more than adequate for occasionally filleting some fish..

Rated 5 out of 5 by from Great multi purpose knife This is a knife I didn’t know I needed until I used it. I always thought this was really supposed to be used for just fish or chicken, but you can use this knife for so many other purposes! My friend showed me how to peel fruit with it like oranges and that was a game changer! It cuts so cleanly and with it’s thin profile you can really get a nice slice, whether it’s removing meat from a bone, or skin from fruit or fish, it’s a knife that can be really handy to have in the kitchen when you need it.

Rated 4 out of 5 by from No bones about it. Great addition to our Four Star set. The blade is narrow and thin with a little more flexibility. The handle is comfortable. All around a lighter knife which makes it easier to maneuver.

How flexible is flexible? I am trying to replace my knife that because I broke the tip off. The knife itself does not bend easily, we use it a great deal. We slice grave lox easily with it.

Asked by: PattiS
This blade is made thin and flexible specifically to follow curves when cutting. The knife is not rigid and fixed like other knives to prevent it from loosening in the handle or breaking while boning meat.

I own one of these knives and love it. At a thrift store, I found another one, identical in design, only it is not a knife because there is no cutting edge & the end of it is round. What is this piece to be used for??

Asked by: Hurricane
It is difficult to tell without seeing it, but it could be a tool for shucking shell fish, a spatula, or even some type of utility knife.
