With the filleting knife from the ZWILLING Diplôme series, you can cut and fillet meat and fish like a professional. This is because its was developed in cooperation with the top-class chefs from the “Le Cordon Bleu” cooking school. Therefore, it is characterised by its particularly good handling and consists of materials that are also suited for permanent use. You can impress your guests with this filleting knife. The blade of the ZWILLING filleting knife has a length of 18 cm. It consists of particularly hard FC61 steel and therefore retains its sharpness for a very long time. It is classically fastened to the handle with three rivets. This connection is seamless, making the knife not only practical in use but also highly hygienic and low-maintenance. The handle is made of high-quality plastic. It is ergonomically-shaped, making it possible to work with the knife for long periods of time. Thanks to the slender, elastic blade of the ZWILLING filleting knife, filleting meat and fish is very simple. Now, filleting salmon into wafer-thin slices is no longer a major feat. The filleting knife from the ZWILLING Diplôme series makes it easy for you to be creative and surprise your family or friends with delicious new dishes.

Rated 5 out of 5 by from Flexible and Sharp! This Filleting knife is so flexible can be used for many purposes, cutting and slicing large food. Perfect for slicing and carving roasts meat and pot roast, can be used for larding, and its versatility makes a must-have knife in every kitchen! It's a go-to knife, a scalpel-like sharpness, and precision. The Zwilling Diplome is made in Japan but is still a German-engineered knife. While it may look like the Miyabi Evolution, it slightly has a different handle. The handle is ergonomically designed to make knifework easy on the hand and wrist muscles. The blade boasts an authentic Japanese blade profile made of an impressive FC61 special steel, hardened to approximately 61 Rockwell. It offers exceptional durability, cutting edge retention, and corrosion resistance. I personally recommend handwashing this beautiful knife keeping in pristine condition and sharpness.

Rated 5 out of 5 by from excellent BEST OF BOTH WORLDS This 7" flexible fillet knife is a perfectly designed for producing pristine slices of meats and fish. Super sharp, durable and well balanced. Great feel and weight- Easy to work with. Asian styling and German steel make this a best in class blade. I like the curved bolster for complete use and sharpening of the blade. The classic three riveted handle is comfortable to hold. A fabulous knife.
