Rated 5 out of 5 by from Great chopper This 6-inch chef's knife, with the wider blade, is reminiscent of a Japanese butchery knife. It is fluid and responsive. I like it for boning fish with a tougher skin and bigger bones. Great for chopping vegs and cubing meat. The beefier handle feels good in my hand. The Meiji line is as tough as it is beautiful. Made of 101 layers of steel, and ice hardened in the process, this knife will work hundreds of menus before it needs to be sharpened. The patterned blade is signals the Damascus-style layering. The bright stainless is eye catching. The handle is a little longer than traditional handles. Great for larger hands or folks who don't use a pinch grip.

I have rather large hands and it’s difficult to find a knife that fits my hand without a compromise on weight. the Meji 8in chefs knife is in my opinion is in the master class of knives. I love this knife! It glides rather than cuts! While I think this knife is near perfection, I think it is important to mention that this knife is rather large, has a d-shape handle, and is pricey. Despite the concerns above, if you are looking for a knife that will easily become a loved piece of art and functionality in your household, look no further. This knife is everything I expected and more!

I liked this 6" knife wide blade my daily prep knife, because it is less effort for me to go in and out cutting and slicing food. Its potent core of FC61 fine carbide stainless steel is protected by 100 layers of nickel and stainless steel. Blades offer remarkable durability, sharpness, and cutting performance. The ergonomic charcoal Pakkawood handles is more comfortable for left handed cook. Damascus pattern on the knife provides added durability, helps prevent food from sticking.

Made of 101 layers of steel, and ice hardened in the process, this tough knife will work hundreds of menus before it needs to be sharpened. The patterned blade is reminiscent of Damascus layering. The bright stainless is eye catching. I smile whenever I use one. The handle is a little longer than traditional handles. Great for larger hands or folks who don't use a pinch grip. The 8-inch chef's knife isn't 'over-arc-ed'; has just enough curve for my liking.

Rated 5 out of 5 by from This beautiful knife designed by Master Blade Smith Bob Kramer is a work of art. With 100 layers of ladder Damascus surrounding a FC 61 core this knife is built to last. The exaggerated D shape of the handle is designed to feel secure in both the left and the right hand. These are well balanced yet light weight knives that cut with precision and ease. This knife feels so light for it's size. The thicker handle helps make this knife feel very secure in the hand and during use.

This length is wonderful when you need the extra blade reach on large cutting tasks. The core of this knife is made from FC61 steel and the edge is hand finished in the Honbazuke process which is a three step process to achieve the finest edge. Ice hardened so you don't need to worry about cracks and chips. You will marvel at the performance of this don't need to worry about cracks and chips. You will marvel at the performance of this knife, no cutting fatigue whatsoever.

Rated 5 out of 5 by from Cuts sweet potatoes like butter It’s fits my right hand perfectly but I am left handed and yet it fits well in my left hand. It cut effortlessly through a hard sweet potato actually easier than my Victornox Maitre 8” chef knife. I am a woodworker and appreciate the fit and finish of the handle and blade. I recommended getting this knife to eight of my friends who cook. They have to see if they can can get it past their domestic congress I guess. Now I will have to make a new knife block that will further facilitate carbon steel blades from holding moisture.

Can you Rock chop with this knife? Ive been told you cant with japanese style blades

Should the wood handle be rubbed with oil every once in a while for maintenance? Or is treatment on it good enough to hold up over time?

Does this knife have equal 15 degree angles on both sides or only one?
