This sharpening steel is hard enough to actually remove bits of metal from the fine edge to restore the sharp angle. Making this magnetic is such a great idea because the small particles will cling to the rod and you can easily wipe it off for clean up after each use.

It is made in Germany with premium steel that will last for years of use - even if you use it everyday. It is handsome. The stainless steel end cap is a nice touch. Adds a little weight for stability. And the handle is made for a wide variety of hands to grip. Well done! And the price is right, too.

All it takes is a little practice (watching the video from this website helps too) and you will quickly perfect edge maintenance. Some folks use it weekly, but I find "feel" is the best guide. If my knife won't cut through a tomato without squishing it, it's time to use the sharpening steel.

Honing steel maintenance tool to align the blade’s edge and stays sharpened to it's angle, this increase cutting efficiency. It is also recommended purchasing the super-eraser to clean any metal residue buildup.

Follow up question: is the material harder than 61 to be used on the Miyabi Evolution 8" Chef's Knife? https://www.zwilling.com/us/miyabi-evolution-8-inch-chefs-knife-34021-203/34021-203-0.html

This Zwilling brand sharpening rod is not designed for use on Miyabi knives which have a harder steel formula. It wouldn't damage the steel but simply would not be as effective.

What Rockwell hardness is this?

We don't rate our sharpening steels on the Rockwell scale, but the material will be harder than the steel formula of the knives, above 58.

Why a magnetic sharpener? How are steel particles removed from sharpener? is a non magnetic sharpener more efficient or desired?

A magnetic sharpener is for convenience in that it will attract any metal shards from the knife during sharpening. The shards can then be wiped away from the steel with a damp towel or cloth. With non-magnetic sharpeners, the metal particles will simply fall, so we suggest positioning your steel over a towel for easy cleanup. We also always recommend rinsing and wiping the knife after sharpening to ensure no metal is being transferred to your food.
