Rated 5 out of 5 by from Excellent sharpener I bought this along with a new set of knives. To test it out, I used it on a 10 year old set of box store Faberware knives that the new set would be replacing. In one word, AMAZING! It put a razor sharp edge on a knife that has been abused and neglected. I highly recommend this product to restore and maintain the sharpness of your investment.

Rated 5 out of 5 by from Works! This thing just flat works! Keep it in you kitchen drawer and if a knife isn't really sharp a couple quick pulls through the sharpener and you are ready to go.

Rated 4 out of 5 by from A nice little 4-stage sharpener, for both the German and Asian made knives in your collection. Does the trick, but will be the first to be replaced among ceramic or stone sharpening methods. It also tears away at your blade more than traditional sharpening methods, leaving a pile of steel behind. Best to learn gentler ways to treat your investment.

Rated 5 out of 5 by from Great So Far Needed a reasonably priced sharpener to easily maintain my Miyabi Kaizen and Zwilling Pro knives. My old Chef's Choice electric was not compatible with either. I have only had to use the honing slots so far due to the Zwilling and Miyabi's excellent edge retention and a couple of strokes and scalpel sharp in seconds.

Rated 1 out of 5 by from Sharpener makes knives dull. The sharpener was bought six month ago and it doers not works. Knives are dull and try with many strokes to sharpen the knives. Very disappointed with this tool, and for this brand! After some inspection, it looks like the stones are rounded at the very bottom, not cutting the edge of the metal as it should.

Rated 5 out of 5 by from Easy to use and effective. This was very easy and intuitive to use. Also did a great job of sharpening!

Rated 5 out of 5 by from Keeps my knives perfect I know the importance of keeping my knives sharp but never had the time to maintain them regularly. Now its so quick and easy. Just a few swipes through each slot keeps my knives razor sharp. This sharpener does both Western and Japanese style cutlery. I didnt know it made a difference not owning any Japanese knives my self but after looking into it its something ill definitely look into for the future.

Rated 5 out of 5 by from Surprisingly Good! I am usually not a proponent of pull through sharpeners. They are often misused. However the ceramic rods that do the work in this sharpener actually work! They don't make me second guess if they are working, and therefore I don't have to run my knife through it a million times, and ruin my blade. Make sure you know how to use it correctly and you will enjoy having this to maintain your knives.

Will this work with the Miyabi knives? I have the Kaizen II and want to make sure I can get the correct angle

Asked by: Westelmach
The Asian slots are the appropriate angle for Miyabi knives, but, for best results, we recommend using Miyabi brand sharpeners with Miyabi knives, because the steel formulas are harder than Zwilling/Twin knives.

Can you post instructions on how to use this?

Asked by: Matt in NH
There are two sides; Standard and Asian. The Standard slots are for all Western knives with edge angles of 15°. The Asian slots are for Santoku and other Japanese-style knives at 10-12° per side. You sharpen by sliding the plastic piece over the slots you're not using, and pulling the blade straight through the coarse slot first, as many times as needed for your desired results, and then through the fine slot to polish and finish the blade. You can find more information on our sharpening page here: https://www.zwilling.com/us/about-us/use-care/article-use-care-knife-sharpening.html?fdid=use-and-care

Will this sharper return my Zwilling Santoku to its original sharpness?

Asked by: mmohsen
This sharpener will help sharpen a Santoku knife. However, Japanese-style knives have steeper edge angles and are more effectively honed with steels or stones. We also offer a professional sharpening service here: https://zwillingonline.practicaldatacore.com/mod_zwillingEdge/

Can it be used for serrated knives.

Asked by: Chris B
No, this item is for use with fine edge kitchen knives only. We do not recommend sharpening serrated knives as sharpening devices can destroy the teeth on the blades that enable them to work properly.

Does it make sense to use this to establish the edge angle and then hone with a steel?

Asked by: MarkDewStevens
You certainly could. I used this on a 10 year old set of box store knives that had been neglected and abused. Just following the instructions resulted in a carving knife that would shave paper. Continued use of a hone, after using this product will result in keeping an edge longer.
