Rated 5 out of 5 by from Everything and the Chicken This is a great dish for roasting a chicken The oval shape gives enough space around a 3-4lb bird that you'll wonder why you never used it before. (Don't use the lid for the chicken, that's for other stuff.) But I like the depth and the shape for a lot of roasting because the ceramic keeps the moisture from evaporating as quickly as a metal, and I can use that as a base for au jus. Very good for gratin cooking, maybe not as good a crust as cast iron, but much more forgiving. Just toss this in the oven and bake according to the recipe and the finished product will be cooked perfectly. Very consistent heating and it cleans up so easily. no scrubbing necessary.

The underside of the lid is designed to redistribute moisture that rises off of the food while cooking. Its also good for the fridge so feel free to make ahead and reheat or for leftovers. I like to also pop it under the broiler for some last minute browning. The glaze is craze resistant and my favorite part is how easily it cleans by hand or in the dishwasher.
