Is this product useful for all baking? I'm thinking desserts, pastas or breads? We always seem to break ceramic pans by dropping or when I attempt to put them under a broiler. I'd like an all purpose pan :)
Yes, absolutely. Staub Cast Iron is extremely versatile and works very well for baking. It can be used in the oven, under the broiler, or on the stove top.

How deep is this dish? How much does it hold? Will using a knife damage the surface?
This Gratin has overall dimensions of 10.6 X 6 X 2.4". It has a 24 fluid ounce capacity.
The enamel is very hard and resilient, however there is a chance a knife will scratch the enamel given enough pressure. We do not recommend using a knife or other metal tools in our cast iron.
We also do not recommend using a knife on any hard surfaces such as metal, glass, or stone. Using a knife on these surface will not only dull the edge, it can damage the blade.
