This Miyabi Morimoto red is exceptionally sharp just like many other Japanese knives. it is versatile, enjoyable to slice, cut and carve mostly everything. Perfect for slicing meat, roast beef, pork tenderloins, turkey and chicken, great for oversized fruits, vegetables, and even bread. It is one of my favorite slicing knife, curve handle is so comfortable in my hand and less fatigue. I've enjoyed using this MIYABI Red Morimoto Edition for years, this has authentic thin Japanese blade profile, made of special formula,made from high-carbon German stainless steel, FRIODUR blade, ice-hardened to Rockwell 57 and exceptionally corrosion-resistant and durable.

Rated 5 out of 5 by from great sharp slicer This is an amazing slicing knife. The blade is forged of super sharp high carbon steel. It goes through a double hardening process making a blade that is very thin and strong. The steel stays sharp for a long time and is easy to maintain and sharpen. The slim blade profile and acute angle give accurate thin slices and cuts. Designed in partnership with Iron Chef Morimoto this knife is a good blend of Eastern and Western knife styles with a comfortable Western style handle on a Japanese blade.

Rated 5 out of 5 by from Sharp slicer This is a great Japanese-German Slicer. I really like the feel of the handle on this blade, it’s very comfortable and contours nicely. The blade has a nice lighter weight to it. This is a great intro knife collection if you want to go from Western style knives to Asian; the Morimoto collection merges the two styles together, with having a durable German steel but styled as a thin and sharp Asian blade. A great blade for slicing fruits and vegetables, fish and meat.

And this one is beautiful and SHARP. is one of the best values in our line-up. The Miyabi Red Morimoto line, merges the best of East and West cutlery tradition under the advisory of the world renowned Chef Masaharu Morimoto. This knife marries Japanese aesthetics and razor-like sharpness with German manufacturing ingenuity. The proprietary steel was created to keep the blade light and strong so it can handle the sharp edge that Japanese chefs expect. A special handle was created using materials that will meet the needs of a professional – it must feel good and true after hours and hours of work; and it must look good, appropriate for a chef, or aspiring chef. This knife medium to lighter in weight; lifetime quality. It will hold its edge and will sharpen beautifully. I strongly recommend hand-washing.

Rated 4 out of 5 by from Zwilling Employee Miyabi Red is a blend of eastern and western styles of cutlery. The appearance, edge angle and blade profile provide the look and efficiency of Eastern cutlery. The ambidextrous 3 rivet handle and the forgiving steel bring the Western advantage. The steel can be easily honed to sharpness and is very nick and chip resistant, literally bending before breaking if it runs into something too hard.

Rated 5 out of 5 by from Incredibly Sharp The razor sharp blade makes slicing through a turkey or roast easy and I can get slices as thin as I need. It has a thin blade and very small edge angle which is what makes it incredibly sharp. The high carbon German steel construction guarantees that it's going to stay sharp and be very durable. I love the curved, three rivet handle; it has the look and feel of my other German knives.

Rated 5 out of 5 by from This slicing knife is so razor sharp with an edge between 9.5 and 12 degrees it allows you to make the thinnest slice of roast. The Morimoto edition knives give you the traditional Japanese blade profile with a western style handle. Forged from specially formulated steel this blade will retain its sharp edge use after use and is corrosion and chip resistant.

Almost no effort needed, as it glides thru meats and any other tasks. Ice-hardened to make the super-sharp blade and durability. No chipping or corrosion. A good-grip handle with red striping, completes this knife!
