Rated 5 out of 5 by from A Western, Japanese Chef Knife! Perfect for oversized food, either cutting, slicing and chopping. Perfect knife for slicing meat, vegetables, fruits and bread. Great knife for roast beef, pork tenderloins, turkey and chicken. It is one of my favorite Chef knife for large cutting needs, curve handle is so comfortable in my hand and less fatigue. I've enjoyed using this MIYABI Red Morimoto Edition for years, this has authentic thin Japanese blade profile, made of special formula, made from high-carbon German stainless steel, FRIODUR blade, symmetric blade with ultra-sharp Honbazuke honing, ice-hardened to Rockwell 57 and exceptionally corrosion-resistant and durable. Its exceptionally sharp just like many other Japanese knives. It is versatile, enjoyable to slice, cut and carve mostly everything. A beautiful Western knife with Japanese blade.

Rated 5 out of 5 by from German/Japanese knife Ya get the best of both worlds with this knife. It has a very thin blade and very small edge angle which makes it crazy sharp. It's made from super durable German steel so you know that it can take abuse. The handle is made like the German knives with the comfortable curve and durable three rivets. A 9 1/2" chef knife is almost like a sword! With that length I can cut the largest of fruits, cut through large piles of food or slice a roast or turkey.

I really love the feel of this knife. it is exceptionally sharp in looks and cutting! it is a knife that can be used as easily in Japanese style food prep as western style. This handle works best in my house because we have leftys and righties that help prepare in the kitchen. well worth the investment to keep everyone cooking happy! BTW this is my 3rd knife in this collection and I always come back to this comfortable grip over anything else

Rated 5 out of 5 by from This knife is a great transition knife for those who are used to German style blades and want to start using a Japanese/Asian style knife. The width of the blade and the handle will feel familar and comfortable yet the performance will be very different. The blade is thin with a fine edge of 12.5 degrees for excellent slicing,, chopping and dicing. With a lighter weight and half bolster this knife feels secure and balanced in your hand.

Rated 4 out of 5 by from This knife is so unique. It is a hybrid between German and Japanese cutlery. The blade profile is Japanese and its sharpened to a Japanese angle, 9 - 12 degrees each side. It uses German Special Formula Steel and is ice hardened providing the durability of a German knife. Best of both worlds in my opinion. And this Miyabi Red Morimoto is one of the best values in our line up. In this line, the best of East and West cutlery tradition merge under the advisory of the world renowned Chef. This knife marries Japanese aesthetics and razor-like sharpness with German manufacturing ingenuity. The proprietary steel was created to keep the blade light and strong so it can handle the sharp edge that Japanese chefs expect. A special handle was created using materials that will meet the needs of a professional – it must feel good and true after hours and hours of work; and it must look good, appropriate for a chef, or aspiring chef. This knife medium to lighter in weight; lifetime quality. It will hold its edge and will sharpen beautifully. I strongly recommend hand-washing.

Rated 5 out of 5 by from This knife is sharp and well worth the investment to get into the Japanese knife ownership market. Once you have used this, you may have a hard time going back to anything else. The angle is more acute and just slices through things like butter. The ice-hardened blades are durable and do retain their sharpness longer, which is the sign of a good knife. I love mine and it is never far out of reach in my kitchen.

Rated 5 out of 5 by from East meets West Morimoto was the first to design a knife that blended his Japanese heritage with the western style knife familiar to America. It's beautifully designed with his name, made in Japan with the true Asian edge angle but made from a high carbon German steel. You get a knife that is incredibly sharp, but very durable. The three rivet curved handle is more of the western design; it will be comfortable and durable.
