Rated 5 out of 5 by from It's a bread knife, love that blade serration! Its serrated scalpel-like knife will smoothly and less stringy or less dragging cutting crusty bread, vegetables, and fruits. I've enjoyed using MIYABI Red Morimoto Edition for years, this has authentic thin Japanese blade profile, made of special formula,made from high-carbon German stainless steel, FRIODUR blade, ice-hardened to Rockwell 57 and exceptionally corrosion-resistant and durable. Its exceptionally sharp just like many other Japanese knives. It is versatile, enjoyable to slice, cut and carve mostly everything. A beautiful Western knife with Japanese blade.

Rated 5 out of 5 by from Great bread knife This is a great Japanese-German bread knife. I really like the feel of the handle on this blade, it’s very comfortable and contours nicely. The blade has a nice lighter weight to it. This is a great intro knife collection if you want to go from Western style knives to Asian; the Morimoto collection merges the two styles together, with having a durable German steel but styled as a thin and sharp Asian blade. A great bread knife, perfect for slicing bread, citrus, and meats easily without tearing.

The blade has the authentic, Japanese style and sharpness with the comfort and easy care of Western knives. The knife is made from high-carbon, German stainless steel and ice hardened so it is durable and exceptionally corrosion-resistant. Love the length on this knife, yes use it for bread, but it can get through a large melon or cabbage beautifully.

Rated 5 out of 5 by from Best of Japan and Germany. It's the perfect Japanese and German combination. It's made from high carbon German steel that is durable and corrosion resistant. It has a very comfortable, curved 3 rivet handle which seems to fit my hand and cutting style perfectly. But it has the very thin blade profile of Japanese knives, part of the reason they're so crazy sharp. The 9 1/2" blade is large enough to slice through large loaves of bread or large melons.

Rated 5 out of 5 by from hybrid Long serrated blade for slicing large crusty breads . this serrated blade is ideal for piercing tough exteriors while gliding through the soft interiors. No squishing!! Beautifully crafted in the Asian style, yet durable and hard western steel. Best of both worlds. I like to use this knife for slicing watermelon, honey dew and cantaloupe. Classic three rivet handle is very comfortable to hold.

Rated 5 out of 5 by from In this line, the best of East and West cutlery tradition merge under the advisory of the world renowned Chef, Masaharu Morimoto. This knife marries Japanese aesthetics and razor-like sharpness with German manufacturing ingenuity. The proprietary steel was created to keep the blade light and strong so it can handle the sharp edge that Japanese chefs expect. And for a serrated edge, the integrity of the steel is critical; you won't need to sharpen this knife, pretty much ever. Just use it as directed and it will last a very, very long time. A special handle was created using materials that will meet the needs of a professional – it must feel good and true after hours and hours of work; and it must look good, appropriate for a chef, or aspiring chef. This knife medium to lighter in weight; lifetime quality. It will hold its edge and will sharpen beautifully. I strongly recommend hand-washing.

Rated 5 out of 5 by from I love this 9.5 inch bread knife. It is the perfect knife for cutting through tough breads with such ease. I love to use this to cut up my baguette. It is so easy! This line is beautiful. It is a great mixture of Western and Eastern techniques. The three riveted handle is very comfortable and balanced. The blade is extremely sharp yet durable.

The Morimoto collection of knives is a nice way to get the Japanese profile blade with a more familiar western style handle.
