Rated 5 out of 5 by from Best of both worlds What a great design and features from Chef Morimoto. A durable German steel and a 3 riveted western curved handle. But the sharpness and weight of a Japanese knife. Truly the best of both worlds.

Rated 4 out of 5 by from This knife is so unique. It is a hybrid between German and Japanese cutlery. The blade profile is Japanese and its sharpened to a Japanese angle, 9 - 12 degrees each side. It uses German Special Formula Steel and is ice hardened providing the durability of a German knife. Best of both worlds in my opinion. Rated 5 out of 5 by from A great Western meets Asian Chef knife This is a great Japanese-German knife. I really like the feel of the handle on this blade, it’s very comfortable and contours nicely. This blade has a nice lighter weight to it. This is a great intro knife if you want to go from Western style knives to Asian, where the two styles merge together, with having a durable German steel but styled as a thin and sharp Asian blade.
