Rated 5 out of 5 by from Iron Chef worthy knife This is a great Japanese style knife. I really like the feel of the handle on this blade, it’s very comfortable and contours nicely. This blade has a nice lighter weight to it. This is a great intro knife if you want to go from Western style knives to Asian, where the two styles merge together, with having a durable German steel but styled as a thin and sharp Asian blade. The rocking aspect of this santoku is great, really an all purpose knife that you can slice, chop and mince extremely well with and with the blade having the grantons, that really helps with food coming off your blade much easier.

Japanese blade style meets German engineering and Western handle. These knives are made from specially formulated German steel that is corrosion resistant. Made in Japan, they are honed in the Honbazuke process to an amazing 9.5 to 12 degree sharpness that will be retained use after use. Hollow air pockets on the edge will help to keep food from sticking as you slice.

Rated 5 out of 5 by from ASIAN KNIFE FOR RIGHT OR LEFT HANDED PEOPLE This is a really cool knife! I can use it like my chef knife because there is a decent curve to the blade but the back half of the blade is fairly flat for easy chopping. It had those lovely little hollow spots that release food easily. The handle on the Morimoto line is so elegant, can be used for left or right handed people and is very non slip as well. Great deal on a great new style knife!

The rocks and glide motion makes preparation more efficient and chopping motion is outstanding for this rocking santoku. Morimoto is made of authentic thin Japanese blade profile, made of special formula, high-carbon German stainless steel, FRIODUR blade, ice-hardened to Rockwell 57 and exceptionally corrosion-resistant and durable.

Love the signature red line. The dimples on this blade will aid in the release of food. Strong , sharp and quick blade. Comfortable, classic handle. one for the collection

Use it for melons and hard rinds like acorn or spaghetti squash The veggie and food will not stick to the blade. Thin blade, yet stays super sharp and durable!
