Rated 5 out of 5 by from Perfect in its simplicity The Morimoto designed collection of knives is such a great series because they have all the most important features of a great knife all while being sleek and simple. Forged from specially formulated German steel the razor sharp 9.5 to 12 degree Honbazuke edge will retain its sharpness use after use and resist corrosion and chipping. The blade has a tradition Japanese thin profile to provide the thinnest and most delicate slices while the handle has a western design for comfort and familiarity. This paring knife has a nice long handle for a secure feel.

Rated 5 out of 5 by from Iron Chef worthy paring knife This is a great Japanese-German knife. I really like the feel of the handle on this blade, it’s very comfortable and contours nicely. This blade has a nice lighter weight to it. This is a great intro knife if you want to go from Western style knives to Asian, where the two styles merge together, with having a durable German steel but styled as a thin and sharp Asian blade. This paring is perfect for peeling veggies, fruit with ease.

Rated 4 out of 5 by from East meets West. This paring knife is madde from German Special Formula Steel and forged from one piece of steel so extremely durable. The knife is also ice hardened which translates to the blade starting sharp and staying sharper longer. The knife is made in Japan and has the traditional style. Blade is razor sharp and can handle any paring job you do.

Rated 5 out of 5 by from Terrific little paring knife The proportions on this knife are terrific for an average size adult hand. I really like the eay this feels and it gives me lots of handle to grip and smooth integrated bolster to guide the blade. Its a really good knife, and really good value. In this line, the best of East and West cutlery tradition merge under the advisory of the world renowned Iron Chef Masaharu Morimoto. This knife marries Japanese aesthetics and razor-like sharpness with German manufacturing ingenuity. The proprietary steel was created to keep the blade light and strong so it can handle the sharp edge that Japanese chefs expect. A special handle was created using materials that will meet the needs of a professional – it must feel good and true after hours and hours of work; and it must look good, appropriate for a chef, or aspiring chef. This knife light--medium weight; lifetime quality. It will hold its edge and will sharpen beautifully. I strongly recommend hand-washing.
