Perfect in its simplicity
The Morimoto designed collection of knives is such a great series because they have all the most important features of a great knife all while being sleek and simple. Forged from specially formulated German steel the razor sharp 9.5 to 12 degree Honbazuke edge will retain its sharpness use after use and resist corrosion and chipping. The blade has a tradition Japanese thin profile to provide the thinnest and most delicate slices while the handle has a western design for comfort and familiarity. This paring knife has a nice long handle for a secure feel.

Iron Chef worthy paring knife
This is a great Japanese-German knife. I really like the feel of the handle on this blade, it’s very comfortable and contours nicely. This blade has a nice lighter weight to it. This is a great intro knife if you want to go from Western style knives to Asian, where the two styles merge together, with having a durable German steel but styled as a thin and sharp Asian blade. This paring is perfect for peeling veggies, fruit with ease.

great paring knife
This is a great paring knife. The Japanese made blade goes through a double hardening process making an extraordinarily strong and sharp blade. It holds its edge for a long time and is easy to maintain. The slim profile and acute angle of the blade allow for easy peeling and trimming with little waste. The handle is very comfortable to hold and use both in hand and on the cutting board.

East meets West. This paring knife is madde from German Special Formula Steel and forged from one piece of steel so extremely durable. The knife is also ice hardened which translates to the blade starting sharp and staying sharper longer. The knife is made in Japan and has the traditional style. Blade is razor sharp and can handle any paring job you do.

I love this 3.5 inch pairing knife. It is great for smaller kitchen tasks and prep- slicing, peeling, dicing, etc. It is definitely a knife that will get a lot of use.
This line is beautiful. It is a great mixture of Western and Eastern techniques. The three riveted handle is very comfortable and balanced. The blade is extremely sharp yet durable.

Terrific little paring knife
The proportions on this knife are terrific for an average size adult hand. I really like the eay this feels and it gives me lots of handle to grip and smooth integrated bolster to guide the blade. Its a really good knife, and really good value.
In this line, the best of East and West cutlery tradition merge under the advisory of the world renowned Iron Chef Masaharu Morimoto. This knife marries Japanese aesthetics and razor-like sharpness with German manufacturing ingenuity. The proprietary steel was created to keep the blade light and strong so it can handle the sharp edge that Japanese chefs expect. A special handle was created using materials that will meet the needs of a professional – it must feel good and true after hours and hours of work; and it must look good, appropriate for a chef, or aspiring chef.
This knife light--medium weight; lifetime quality. It will hold its edge and will sharpen beautifully. I strongly recommend hand-washing.

Any Miyabi knife is extra special, but the Red Morimoto series is simply beautiful along with being functional. Made with the Friodur process so you can be sure of a super-sharp blade that is durable, along with rust and chip free. this paring knife is the only one you will need for a lifetime. Nice curved handle for easy grip!

An Exceptional hybrid of western and eastern style and function.
Sharp, thin and durable Asian blade profile with German engineered construction.
This an excellent knife for slicing small fruits and vegetables. The handle is long and lean and comfortable to hold.
