Every knife features a unique Damask pattern and can be used to prepare authentic Japanese specialties and other dishes that are sure to be the highlight of any gathering. Honed by hand, the blade is extremely sharp and can be used frequently for simple and more challenging cutting techniques. The blade is made from approximately 65 layers of hard, stainless steel for exceptional edge retention and the centre of the blade features a carbon steel core, which is encased by the remaining 64 steel layers. The CRYODUR® blade undergoes a complex process of ice hardening. This process not only gives the knife a more polished finish but also makes it more durable, even when used frequently. The traditional D-shaped Micarta handle is impressively stable and easy to care for, and its exceptional balance prevents fatigue as you work.
