Rated 5 out of 5 by from Traditional Japanese style bread knife This is a great traditional style Japanese bread knife. Super lightweight, the bread knife has a nice balance to it, and it won’t get heavy in your hand if you are slicing bread, fruit, meat, or veggies. The thin yet sharp and durable blade of the FC61 steel of the Koh does a nice job of slicing and cutting easily and smoothly. The Pakkawood handle is more a traditional style for Japanese cutlery, paying homage to the original Japanese knives, samurai swords.

It is not by surprised that this knife is versatile, great cutting bread, will cut those leafy vegetables and even cuts through meats effortless. Fabricated from revolutionary FC61 fine carbide stainless steel - 61 Rockwell hardness, super steel Japanese knife. Exquisite sandblasted katana edge is scalpel-like sharpness Hand wash is recommended.

Rated 5 out of 5 by from Not Your Mama's Bread Knife! Hand-crafted in Seki Japan by artisans skilled in the acient art of sword making. How is that for impressive? I always buy my bread baked by a local baker. The loaves come out with a very crispy crust which is part of the charm. This knife slices right through the crust with ease and does not tear the bread, but slices smoothly. Made of FC61, this blade is sharp, durable, and retains the sharpness for longer. I will have this for years to come.

Rated 5 out of 5 by from This is a must have knife, the bread knife, and if you are adding to your collection slowly, you can't forget this knife. It makes slicing those artisan breads so easy. Some bread knives tear the bread due to poor serration, but this serration just cuts through the bread like butter without any tearing. Super sharp and durable due to the FC61 steel and the special ice hardening process. I plan on having this knife for years to come.

Any knives with the Miyabi name on it is a superb knife, and the Koh knives mix both German engineering and steel with Japanese craftsmanship to make the best knives around. A nice, thin blade with the Friodur process applied, so you know it stays sharp, strong and corrosion free. The Pakkawood handle only adds to its beauty, comfort and functionality.

I want a bread knife that slices through my fresh loaves cleanly but it's also got to stay sharp. This new steel is extremely durable which is going to make this serrated blade last and continue cutting like it's new. It has a beautifully designed, wood handle that fits perfectly in the palm of my hand. Japanese perfection!

The FC61 steel has a polished mirror finish with a sandblasted edge providing strength and beauty. If you've never held an octagon shaped handle you will find it is super comfortable for either left or right handed use. These knives are hand crafted in Japan by true Japanese artisans.

The bright FC61 steel glistens, the super sharp scallops of the serrated edge grip and cut right through even the crustiest breads and the graceful dark Pakkawood handle easily fits in the palm of the hand. Thee 9-inch length is ideal for slicing larger loaves and boules.
