Description

MIYABI 5000 FCD Shotoh, 9cm blade. This Japanese shotoh, also known as a vegetable knife, has a hard fine carbide steel core which gives very good cutting edge retention and sharpness. It is light weight and nimble, and suited for cutting, peeling small fruit and vegetables. The FC61 steel core of the blade is embedded in 48 outer layers of Damascus-design steel, giving each knife its unique pattern. The cutting edge is symmetrical (not single bevel) so it’s suitable for both right and left-handed use. The edge is Honbazuke-honed – a three-stage grinding, sharpening and polishing process resulting in razor-like sharpness. There is no finger guard so the whole length of the cutting edge can be used. The Pakka wood handle seamlessly joins the half-bolster. The smooth join helps to prevent calluses forming on the thumb and forefinger. For best care, it’s recommended to hand wash only. Maintain and sharpen on a whetstone, and using glass, ceramic or stone cutting boards should be avoided as this can prematurely dull the cutting edge.

Rated 5 out of 5 by from If you liked the sharpness of the original Kaizen, but found the handle a little foreign, then it might be time to reconsider the Kaizen line. The handle and the bolster were beefed up to provide more feedback with a firm pinch grip. The 49-layers of steel are hand finished to an extremely sharp edge that holds. It has a double Damascus pattern that is stunning. This paring knife is easy in the hand. Nimble. Easy to core out a tomato, take the eyes out of a potato. Very popular knife.

Rated 5 out of 5 by from It's the perfect little parer! It is so incredibly sharp, you could carve a rose out of a radish; or perform a normal task like peeling an apple. The handle is round and smooth; no rivets, so it is very comfortable. It is made of micarta, which looks and feels like wood but is durable like a synthetic material. It is made from a very hard, chip resistant steel, FC61, so it will be very durable.

Rated 5 out of 5 by from One of my most used knives in the kitchen! I always have this knife close at hand when I am working in the kitchen. I bake so I am constantly peeling fruits largely, but some vegetables as well. It is perfect for peeling the fruits and it is super sharp so often I can get that peel off in one long piece! The traditional D-shape handle is very comfortable in my hand and make the small work easy!

The Kaizen II has a beautiful blade and the Micarta wood handle feels really smooth in hand, and has a nice roundedness to it. With the blade having 48 layers of steel, you can really feel how much of a difference that makes when peeling fruits and veggies. A great parign knife to have in the kitchen.

Great for a wooden cutting board. Beautiful wood handle, so comfortable and nice to hold. Really a veggie knife, but we use it for so much more!

I love its stunning Damascus-design, preventing food from sticking to the blade. I am impress for its D-shape pakka wood handle, it feel great in the hand and I can grip this knife even for small cutting food.

I like the curve of the handle because it fits in my hand like it was made just for me and you can really see the handmade craftsmanship that is used to make this. I love the design on the blade.
